Best use of brett that I have seen thus far. Pours with a large, creamy, white head covering a murky, dark orange body. Full retention from the head, and great lacing left on the glass from each sip taken. Aroma is fruity with some spiceyness, citrus-sour and very perfume like and balanced. Fruity and hoppy taste upfront, then a nice balance added by the funkyness, finishing spicey with some fruity notes (but very dry). Lively bubbles, velvetey mouthfeel.

Bottle from Winking Lizard. This beer is a lightly hazy amber-yellow color with a medium thick off-white head that diminishes steadily. Earthy hops, spice and citrus in the nose. Medium-bodied with a flavorful array of herbs/spices, fruits (banana and citrus), hops and malts. The finish is spicy and floral with a lingering citrus and yeast aftertaste. Overall this beer was a pleasant surprise.

In short: A very wild Saison-ish beer with a whole lot of juicy citrus hops. Fantastic
How: Bottle 750ml. Consumed when 6+ months old. (much better than the fresh bottle I tasted a few months ago
The look: partly cloudy golden body topped by a medium off-white head
In long: Nose has a strong farmhouse character along with a nice bouquet of wild flowers. Taste has juicy crisp caramel, flowers juice, juicy citrusy hops. The brett here is incredibly under control and mellowed out by the generous amount of juicy citrusy hops. The beer ends-up feeling more like a very wild Saison than a bretty beer. Body is pillowy, carbonation is relaxed. I had a tasting from a fresher bottle but the beer still had some residual sugar. Now nearly 6 months later the yeast ate it all and the beer is nearing perfection. With an aged bottle everything is so well integrated in this beer that it becomes really hard to dissect or categorise, this is really a tough one to figure out, just like most signatures.

On tap at the PIB 2007. Pours light golden with a soft white head. Tropical fruit aroma and flavor, pineapple, citrus, and floral hops, all wrapped up in a zesty spiciness. Dry and crisp in the finish. Very enjoyable beer although I didn’t get much of a west coast hop flavor from it.

(Rating #1459)

Draft at the Seattle International Brewfest. Pours clear medium orange/amber with thick, fluffy off-white head. Grassy, floral, lemony nose. Attack is soft but a bit tingly. For the mid-palate, all the same notes from the nose return to go ’round again. Very dry lemony pucker of a finish. The promotional materials mention West Coast hops, but they never materialize.

Pours a striking clear gold with frothy white head. I smell fruit like lemon mixed with pears and flower pedals. Its just a bouquet of fresh cut flowers. Wow, the flavor is a hand full of flower pedals. I also get a mixture of lemon, pears and apples. There’s mild yeast in there too. It could use a good year of age. Flavors seem less than melded appearing a bit too bright.

Very foamy - a loose white head sit atop a cloudy orange brew. Smells very fruity and herbal, mixed in with a lot of funky notes. Lots of fruit and white wine notes in the flavor, plus more herbal notes. A really great brew. Sampled at the Raleigh WBF.
