A couple of thing about Sly Fox IPAs, I think they have a great malt receipe and I love the idea of zeroing in on one hops. Its a real tool for the beer geek, and all have been good so far. Copper colored, moderate head, translucent. Aroma is grassy and slightly citrusy. Flavor is fairly bitter, but a little malt does seem to peek through the hops bitterness. This beer has a ruby highlighted amber body with a small frothy head and some lace. The aroma has notes of Cascade hops (duh!) and buttered toast, and light caramel malting. The taste displays a sharp bitter bite, grapefruity twang, and with a caramelized malts undertone. Sublime woody and hop spicy undertones follow. The feel is dry and astringent, very crisp and fresh. It smelled of Cascade hops, and was a bit floral and sweet smelling as well. Appearence was amber/brown color. Poured with nice creamy white head. Provided big thick lacing. Flavor was pure Cascade. Nothing more, nothing less. I could drink this all day, so needless to say, the palate was great. Also had an awesome dry-bitter finish. Overall, I love Cascade IPA. Outstanding aroma of graham, freshly picked Cascades, and lush toasted malts. Underlying caramel-covered nuts and nougat. Sufficient, yet not overstated, dry-hopping. Soft mouthfeel with tight, creamy carbonation. Remarkably fresh, zesty hop flavors and a subtle nutty yeast profile. Toasted graham and caramel emerge briefly in the center to soften some of the massive Cascade onset. Fairly slick and jellied, which adds more depth while softening the body. Extremely malt-accented as well, with toasted bread inundating the palate and offsetting the stinging bitterness. Hops attempt to pull the mouth to the ground with their fresh, explosive bitterness. Ends with the unmistakable and addictive SlyFox house character alongside fresh, oily, minty Cascades and a lush anchor of glazed malts and toasted bread. Palate-numbing hop resins and minty Cascades linger with light lemon zest and toasted bread. Flawlessly extracted hop flavors dispel the notion that Cascades can’t resemble something other than grapefruit. A gorgeous harvest ale, with hops that were seemingly picked yesterday and thrown directly into my glass. Breathtaking creation from Brian O’Reilly, an elite brewer of the world.
