Dense moussy off-white head that falls quickly away leaving very little lace. Huge piney nose--first thing you think of is a Christmas tree. Nice medium body with sharp tingly carb. Small streaks of lacing are left around the glass. Mild streams of CO2 slowly rise to the top.
Smell is citrusy, herbal, floral, mostly clean with notes of caramel.
Taste is of the mentioned aromas but stepped down slightly with a very mild citrusy flavor.

Aroma is floral and citrus with a touch of malt in the background. Taste seems more floral than citrus to me with a strong bitterness throughout. Aroma is a nice, subtle grassy-citrus that smells like you’re relaxing in a nice field - also some light caramel-bready malts in there. Flavor is a nice citrusy, grassy hop bouquet with a smooth, tasty, but not overpowering malt taste. Really tasty - just had a Founders Centennial IPA yesterday and found this one to be equally good. Best IPA project beer I’ve tried yet, but I’ve never had the elusive Simcoe.............
