Upon opening it didn’t gush like champagne, but it had developed a light, fine carbonation. The apples add a mild tartness which also lingers in the finish, and the alcohol appears only in the texture, not the flavor. A subtle smoke undertone registers in the finish. Kinz (1900), Glen Allen, Virginia, USA Jan 22, 2005 Light hazy gold, very faintly effervescent. Attempted to push off its own cork in fact, even through the wax! Aroma is lightly of honey and apples. Initial honey sweetness in the mouth, followed by a refreshing burst of real apple flavor. None of that red deliscious engineered junk, but actual apples the way they used to taste. I’m recalling Pippins. As it warms, there is a slight bacon flavor that makes its way in that I know consider to be a "house" flavor. Quite relaxing, would make a superb apertif.
