Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Black with a large tan head, lots of sea foam remaining. Nose is very hoppy, some fruit and roast coming along. Flavor mirrors this, more syrupy alcohol and chocolate than the nose, but the hops are still quite dominant. Heavy and thick, the hops offer some balance and keep it afloat, though perhaps my largest complaint is how short the flavor is. In the long run, too much hop for an IS (for me), but it definitely provides for a unique and overall very good beer.

07 vintage bomber shared w/imadeadguy. Poured black w/tan head of course. Huge blast of malt and chocolate in this one. Very bitter but in a good way. Nose is sweet with tons of rich mocha flavors filling the nostrils. Great beer for the price. Very highly recommended for anyone who can get this locally.

06/07 22oz. Pour is black as night with a foamy coco brown head. Aroma is of roasted malt, coffee, and chocolate. Flavor is smooth with malt, chocolate, and warming alcohol. Awesome stout for the ages.

Bomber thanks to MrBendo. Pours pretty darn black with a foamy light brown head that spottily stays around for the entire time. Aroma shows chocolate, a leafy, piney hoppiness, a slight astringency. A dark fruit presence, berry-like, is also noted. The hoppiness is distactring from the other components of the beer. Taste is chocolatey, very bitter, hoppy, with an astringent finish. The hops seems to taste unfresh to me, don’t know how to explain it better. This beer seems pretty green to me. I think this one could benefit from some more aging.

22oz. Bottle. In the snifter this beer is inky black with virtually no head. Nose is somewhat mild with a bit of coffee and chocolate. Flavor shows lots of roasted malts and a bit of hop bite. Bitterness is nicely balanced by dried fruit, chocolate and black licorice flavors. Finish is dry and slightly hot. I sat on this bottle for about 7 months and the sharper characters have mellowed somewhat from the first bottle I tried. Alcohol is very well hidden, but you’ll feel it about half way in. Overall a very nice Imp. Stout that I’d like to get more of.

This was a dark black beer with a short brown head. It looked delicious in the glass. The smell was faint but nice and enticing. The taste was a little coffee and a little chocolate. I didn’t really taste the alcohol at all.The drinkability on this one was awesome and I wished I had another glass. It would be nice to buy this locally but oh well. 22oz thanks to bmartin08! Big and pretty ... deep dark pour with minimal cream head that dissipated quickly. robust dark malt, smoke, chocolate, espresso (thinking darkchocolate-covered beans). nice use of hops too .. drys it out. pretty nice mouth, sweet-sticky in the right ways. Enjoyed quite a lot

Very dark color almost black, with a off tan fluffy head. the aroma is strong in hops and malt. the flavor is very hoppy wiht slight sweetness. It also has very nice lacing with a finish of beign dry.
