Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Pours an obsidian black with tiny, mocha head that dissipated completely. Rich mocha cappucino nose, fudge aroma with strong funky pungent hops. Thick and chewy mouthfeel with noticeable warming. This bomber took all evening. Molasses and root finish. Reminded me of Old Rasputin, with a little extra hop oomph.

22 oz. Opaque with a small, but enduring head. Big nose of orange, chocolate, molasses and cured tobacco. Same flavor elements but with more emphasis on the orange and tobacco, plus some oak and alcohol presence. Strong char, peppery ginger and tobacco aftertaste. Medium-heavy body is tingly with hops and carbonation, warming with alcohol, and nicely sticky. Good, but still a bit hop harsh for my Impy tastes.

black pour with smallish head. Aroma and flavor are both characterized by hops- much more than your typical impy. It’s surprising, yet still delectable. Palate is very smooth- very tasty beer.

22oz bottle split into three snifters poured opaque black. No light gets through this one. Deep coffee, roast, charcoal, smoke, and a grassy hops in the aroma. Rich chocolate taste, with bitterness up front. Very smooth and slick tasting(oily). Alcohol present at the swallow and once it hits your stomach. Almost a port flavor. Some type of dark fruit in the back of the taste.

[1288-20080411] 1pt6floz bottle. Roasted boozy raisin skins aroma with dark malt fruit. Dark black brown body with a quick light tan foamy head. Smooth dark fruit flavour with a bitter coffee background and a base of booze. Full smooth body. Very nice and smooth and dark and yummy...

This one came in from my ss this summer and what a tasty addition to the box. More on the fruity side of things as opposed to the over the top roasted malt/chocolate/coffee experience you usually get. Aroma was rich and full of red fruit and molasses, some plum as well. Flavor started out with the burst of red fruit again and faded to a roasted coffee experience. The texture was slightly chalky and it leaves a bit of a sweetness at the end. Very tasty.

2006 Bottle. Poured black with a thin tan head. Nice aromas of coffee, chocolate with a light roast and hop background. Light alcohol also in the aroma. The flavor is much the same as the aroma but the coffee does not stand out in the flavor as much as in the aroma. Leaves a nice toffee/mocha after taste. Medium to full body that is sweet (med) upfront and bitter (med) in the back. Very nice!

Bottle. Pours black with some floaties with a small tan head that dissipates. Aroma of nice roasted coffee, sweet roasted malt, and a little squash. Flavor of roasted malt. Flavors are a bit muddied; I get a lot of general sweetness. Heavy, but drinkable. Doesn’t quite compare to the big boys.
