Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Bottle. Pours heavy, like old motor oil, with a slowly developing dark head. From two feet away, the aroma is overwhelming. Sweet, malty, sharp and bitter all in one. Heavy and bitter. More bitter than expected. While the alcohol is evident in the mouth, the taste and aroma is not noticeable. Aged for a at least half a year.

Bomber, thanks to HogTownHarry! Poured very deep brown.. almost black with a lovely initial cap of deep brown head.. receded to a dusting and ring after a couple minutes. Aroma was chock fulla deep, roasty malt goodness.. dark chocolate at the helm with some coffee as well.. hefty pine presence comes through with warmth and the alcohol presence enhances the good smells.

Flavor was on the sweeter side with deep-roasted chocolate and coffee and pine bitterness.. alcohol was never subtle, nor was it overt. Medium-bodied with very nice balance to it.. left a long, warm roasty chocolate finish. Really enjoyed this!

22 oz Bomber wife brought back from Wi. Good chocolate aroma. Black body with creamy tan head and lacing covered the glass. Creamy milk chocolate flavor with mild bitterness. Carbinated belch on finish with a dry coco power aftertaste lingering on palate. Man wife is good beer hunter.

22oz, shared with ArcaneApollo. Aroma is very chocolatey, though I detected some coffee, vanilla, and malt notes as well. Flavor is the same, with mostly chocolate in the front and a coffee finish. Smooth, but run-of-the-mill imperial stout.

22 oz. Aroma is dark chocolates, coffee, and roasted malt. Flavor is a slightly bittersweet chocolate, with coffee notes and a lot of roasted flavors. It is quite smooth and is very rich. There are many Imperials I probably wouldn’t drink often, but this one was superb. Alcohol is masked very well.
