Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Pours black with a very light bubbly sparse soapy tan head. Nose is definitely hoppy and roasty. Flavors of dark rich malty and dark chocolately bitter brownies and a very lightly bubbly but creamy flavor. Dry and cocoa like presence as well. Pretty highly hopped for an imperial stout, but still maintains the feel of the style from the massive rich dark malty flavors behind it. One of my favorites from a night of over 20 beers.

2006 22 oz. bottle via trade with JCapriotti and jasonmech77 - Pours a deep dark brown color with a good size tan head. Light spotty lacing. Has a nice citrus hop and light roasted malt aroma. Don’t find too many IS’s using the 3 C’s hops. I like it. Has a smooth chocolate flavor with a good bit of bitterness to boot. Medium to full body. Bitterness seems to linger a tad. Gonna have to sit on my other bottle for awhile. I like this beer, alot. When I start brewing again, this is what I’m shooting for. Thanks Jason.

The aroma spoke a language littered in smoked apricot, meat, and vinous waves of chewy wood accented vanilla laced bourbon. That was a mouthful, eh? as was this beer, flowing with smooth chocolate and vanilla flavors with slightly hidden notes of dried fruit.

22oz bottle. Pours jet black with a creamy tan head. Tons of licorice, black fruits, coffee, and cocoa on the nose, light booze. The profile is dominate with coffee followed by black licorice and bittersweet chocolate. Good mouth feel and nice carbonation. A damn good Impy Stout.

Btl shared by Springslicker. Very dark brown black pour with a huge head. Aroma of toaste malt and chocolate with hints of coffee. Very smooth choco flavor with hints of coffee as well. Solid mouthfeel and good carbonation. Very nice IS with all the atributes. thanks Jay

sampled blakes... a fairly hoppy dry IS w/ a thick tan head over an opaque pour. Aroma was dry coffee and coccoa powder w/ some citrus tones. Palate was well coated but lacked some of the creaminess i like in my imperial stouts. The flavor was dry and highly chocolaty.

22 oz. bomber. After spending almost 2 hours driving home through the sleet and freezing rain, I was really in the mood for a "big" beer last night. Thankfully, I opened up a bomber of this lovely brew. Pours an opaque black with a luscious, bubbly mocha head. Aroma of roasted malt, raisins and prunes with a very light coffee undertone. These same qualities were also present in the flavor, just slightly less intensely I thought than in the aroma. I also picked up some scotch whiskey in the flavor. Some hops bitterness at the finish. Good stuff.

Nice dark brown to almost black color,small dark tan head that faded quickly but left a slight lace behind.Roasty,malty aroma with a decent chocolate and coffe hint as well as some hops coming through.Nice roasty malt taste with a slight sweet side as well as maybe a sort of salty thing going on as well.The coffee is a little mild with a decent bakers chocolate coming through towards the end.The hops come through nicely with a decent bitterness in the end,and an after taste of dark chocolate.The alcohol manages to stay in check for the most part with just a hint in the end.Not as smooth as the Bear Republic Stout but still pretty decent.
