Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

bottle 2007. pours the color of the brown bottle with some crimson tints. sweet cocoa powder aroma like nesquick with vinous zinfandel quailties. flavors...vanilla, wood/ashiness, chocolate powder, cream and some coffee on the dry finish. mouth feel is medium with more cream. if it weren’t for the alcohol presence when this warms, it would be considered a "boring " beer. i’d like to have this fresh to be able to actually get some hoppy bitterness...

Bottle pours a dense deep black with a thick dark tan head. Aroma is decidedly hoppy and dark roasted, chocolately and leather. A bit like expedition. Very rich and full molassas and dark fruit. Flavor is quite chocolatly but still very bitter and smokey. Body is a bit thinner that I expected but does not detract. Soft carbonation and a suprisingly soft bitter trailer.

Muchas gracias, Cletus! Bomber releases a dark brown, viscous pour with lots of head (especially for the styel) and aromas that have a TON of hops in them. Pine covers up chocolate and alcohol. Flavor is heavy pine up front and then transitions to pine and chocolate milk on the backside. Variation from sip to sip seems to be pretty large, with some focusing more on cocoa and some more on the pine with the ever-present alcohol warmth and flavor coming through.

Bottle thanks to ericandersnavy. Pours black with small copper head. Aroma of dark roast & alcohol. Flavor of strong dark roast and alcohol with a hoppy bitterness. Mouth feel is med.-full body with med. carbonation.....not too shabby...

Bottle. Pours black with some floaties with a small tan head that dissipates. Aroma of nice roasted coffee, sweet roasted malt, and a little squash. Flavor of roasted malt. Flavors are a bit muddied; I get a lot of general sweetness. Heavy, but drinkable. Doesn’t quite compare to the big boys.

Bottle from trade with MaxxDaddy. Black with a dark tan head. Moderate cocoa on the nose, minor contributions of dark chocolate, alcohol, and roast. Maybe licorice also. A lot of bitter roastiness up front with some heat following up. A nice brew, roasty and easy to drink, and not necessarily trying to hit the home run. Satisfying.

Very dark brownish opaque black (but not inky) with a brown head. Lots of piney hops and rich chocolate in the nose; nice. Heavy intermingling of citrusy/piney Pacific NW hops and roastiness. Flavor has notes of pine, grapefruit, burnt wood, roasted malt, dark rich coffee, plum, raisin, caramel, dark chocolate and red wine. Pretty complex. Full, round and lush on the palate with moderate carbonation. Good stuff.

22oz bomber. First impression, this is a solid imperial stout that has a unique hop profile. Aroma is very hoppy, floral, fragant, equally resionous green tree sappy piney, I’m really quite intrigued with the malt profile, charcoal, fruity, licorice, bitter dark chocolate, very nice. Flavor is deliciously smooth and rich, hops are still quite assertive, same as aroma, floral, super green and piney, resious for sure, the malt profile definitely takes a backseat but it is wonderful in itself, a bit ashy fruity light charcoal, works surprisingly well with the green floral hops, reminds me of Deschutes a bunch, finish is nice, some very rich syrupy chocolate sauce and a nice vanilla kick, somewhat ashy aftertaste. The body really is what holds this beer together, medium/full, closer to full but without being the least bit syrupy or chalky or too viscous, the carbonation matches the hops perfectly, lively and sharp without detracting at all from the malt profile. Double IPA/Imperial Stout tag-team. Strangely addicting.... like a lighter bodied and easier drinking Darkness.
