Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

22oz 2006 bottle consumed on 4/25/06. Pours a black color with a tan/brown head. Nose is fresh juicy hops, some cocoa. Nice lacing throughout the glass. Palate is fairly thick with a stingy feel and a good bitterness in the finish. Flavors of juicy hops, cocoa, malted milk. Needs to be put down for a bit as it is still way too fresh.

Bottle courtesy of Cletus. Very dark pour. Some sweet notes but mostly dried bitter. Upfront taste is bitter chocolate with a lot left to be desired. Solid, just thick.

Source:22 oz bottle split with a few friends.
Glass:North Coast snifter.
Appearance:Black pour with a thin brown head.
Aroma:Chocolate, roasted malt and citrus.
Flavor:Molasses and brown sugar, with chocoalte and roasted malt in the finish.
Palate:Full body with soft carbonation.
Overall:Excellent RIS. Love this stuff.

Big black pour with a thin small mocha head. Aroma is very very hoppy with notes of coffee and chocolate. Flavor is very roasty, lots of roasted malt, and a boat load of licorice. A nice imperial stout, i really enjoyed sipping on this one.

Bottle: Nice roasty nose. A bit of a high abv smell. Great color Brownish black. Bitter chocolate Roasted malt flavor. Kinda oily chocolate finish. Pretty good.

22 oz bomber. Pours a pitch black color with an extremely thick beige head. Aroma is of roasted coffee beans, fresh malt and dark rich chocolate. Taste is very bitter yet smooth with a roasted coffee dominance. Dark chocolate,malts and smoked flavor are prominent. Excellent !!

Black with a solid tan head. Roasty burnt dark chocolate, vinous dark fruit, subtle anise, subtle coffee beans, burnt cotton candy. Full, rich, balanced palate. Solid imperial.

Bottle, 2008. Aroma of roasted malt, some chocolate, alcohol. Flavor of roasted malt, sweet chocolate, some dark fruits upon warming, alcohol. Finish at first seemed very heavy on the alcohol to me, but turned to a nice coating bitterness over time. Grew on me as it warmed, but still not a favorite impy stout.
