Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Light chocolate smoke over rich roastiness on a bed of slightly burned leaves…A great mouthfeel, a mouthful of a goddess’ hips…Another Smuttynose success...

Pours the usual brown with a tan head. Smells of vanilla, cocoa, sweet chocolate, coffee, some figs. Taste is roasted with some bitter chocolate and fruity notes popping through. Finish is sweet and unbalanced.

Bottled: Pitch black coloured. Brown dense head. Chocolate, malt, roast and some light coffee in the nose. Malt, alcohol, roast and cocoa in the flavour. Quite full bodied. Ends on a medium bitter note. This is a very good beer. Thanks Jeppe

Thick oily black pour with a thick fine-laced dark brown head. Intensely roasty nose with a heavy tarry roasted malt character. Bitter chocolate and a nice rich maltiness. soft note of dried fruit underneath the chocolate and roast. Leathery palate with loads of dark chocolate, licorice and a fairly bitter finish. Hopping seems quite herbal and lightly woody. Very assertive bitterness but it is well-balanced and quite rich tasting. Lovely impy stout that really reminds me of young Brooklyn BCS.

2007 bottle, somewhat fresh, found at Astor Liquor. Deep brown body with a semi-dark tan and brown head, filmy really, not tall or building, but also not invisible. Oily, viscous brown resin coats the glass. Nose of robust dark, bitter bakers chocolate, smoked cream, smoky, charred toast and charred/burnt milk. Hints of vanilla cream, some floral lactic scents as well, some lighter peppery, vegetal notes, with the creamy yeast being most evident. Exceptionally deep nose, yet completely focused on the chocolate and charred malts, not really any dark fruit or sugar presence. Moderate thickness, doesn’t devour the palate, rather it’s lightly syrupy, oily, with a medium to light dried vanilla and malted milk ball flavor wrapped up in a heap of bitter dark chocolate and charred cereal grains. It leaves on the tongue a very slight pastiness. Rich toffee and vanilla flavors show up in a lingering, resiny, chocolately finish. Very good all around, I like the medium thickness opposed to a more viscous texture. Well-made and fresh and moderately malt-forward.

Dark brown as it leaves the bottle, this Stout is quite black in the glass. The well sustained head is a yellowish tan in color. Quite a few components in the aroma - roasted malt and barley, dark caramel, old coffee grounds, aniseed, alcohol, runny chocolate, and a hint of smoke. Much of the commercial description is wrapped up about the hops in the brew, but they don’t show much of a presence save for a dry bitter finish. The flavor is pretty much like the nose except that the alcohol is more prominent, almost distractingly so. All in all, a real decent warmer of a beer.

Near black with a cascading tan head. Sweet dark chocolate wit a noticeable floral hops backdrop. Sweet dark chocolate start with a touch of light fruit. A bitter coffee middle. Finish is roasted grain goodness with enough flavor hops to add to the dimension. linger is long and roasty. Smooth feel. Thanks to Falconeye8 for this brew.

Bottle: Pours a dark black color with a thick tan head and nice lacing, excellent carbonation and head retention for a beer of this type. The nose is very hoppy, almost annoyingly so, that it almost overpowers the alcohol and the roast. Well, the alcohol is certainly there at least. The flavor is a bit like soy sauce with the ripeness, but the hop bitterness and dry roast astringency get their word in too. The finish is long and pleasant, very nice body and sweetness level blends with the hops. A bit of delayed alcohol sting on the back of the tongue. Nice Imperial Stout, but it’s also like a black double IPA if you can see it that way. I like it. Thanks Ken!
