Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Bomber - Pours a dark black/brown in color with a thick dark tan head that really hung in there... producing some really nice lacing on the glass. Aroma is mostly of pine hopiness and some dark roasted malts. Flavor has dark roasted malts, some chocolate, coffee and (of course) the unusual amount of piney hops. Palate is thick and oily. Alcohol is really not that apparent, but it does warm the belly after a bit. The lingering finish has plenty of hop bitterness and the astringency of the black patent malts. The hop/malt equation is flipped in comparison to most Imperial Stouts, but that does not mean it is not very good beer. I like this one...

Strong hoppy aroma that hides most of the malts. Black color with a large brown head. Sweet beginning with a bitter finish. The alcohol is very noticeable in the end it is 10.1% abv after all. Lightly creamy palate. Very hoppy for a imperial stout.

Pours dark brown/black with light brown head. Roasted malt and some hops in the aroma with a little alcohol. Roasted malt, coffee, vanilla and chocolate flavors. I’m also getting lots of hops and a touch of lemon. Full body with a good amount of carbonation for the style.

Pours a deep dark brown color with brown head that fades quickly. Aroma of light chocolate, copious amounts of citrus and pine flavors, and roasted malt. Taste is coffee, light chocolate, roasted malt, citrus hops, alcohol. I’m a hop addict but I’m not use to the amount of hops in this impy stout. Great beer but it would benefit from some aging.

Bottle sample at Decadence release. Poured a deep oil black. Nose is malty. Lots of malt flavors with some hop kick. A little flat, perhaps opened too long. I look to resample sometime.

(2006 Vintage) Very fresh minty hop nose. Pitch black. Drinks nice and easy fro 10% ABV. Fairly dry which I like, otherwise a hop forward chocolate/coffee bomb. Smuttynose hit the mark on this one. Strorm King like hops.

Bottle, fresh. Pours inky black with a thick tan head. Aroma of choclate, roast, coffee, caramel. Flavor is chocolate, coffee, dark fruit, molasses. Palate is full bodied, medium to mild carbonation, finished bitter. Awesome beer, there needs to be more love for this one!!
