Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

(07.04.06) One pint 6oz brown bottle from Bierkraft, Brooklyn, NYC. 2006 bottled conditioned. Poured opaque black with giant tan head. Soft carbonation. Roasted malt aroma. Medium-to-full bodied stout that starts with light malt sweetness and cholcolate/expresso coffee/hop flavors. Finished with light bitterness and roasted malt fade. Smooth, rich and well-balanced. Deep complex character. Alcohol well hidden. This is one awesome tasty stout, one of my favorite beers.

Bottle. Nose is big caramel and alcohol but very nice. Thick black pour with a swirly patch of a head. Huge sweetness into chocolate into coffee with a light alcohol burn in the finish. Good smooth palate with a dry finish.

Pitch black pour with 1 finger lingering tan head. Intense aromatics in the form of the hop- dominated by pine and citrus. Hops were also quite evident in the flavor- too much so. This is quite over hopped, but somehow still managed to be delicious. Excellent smooth malty backbone, but eclipsed by hops. Oily rich and thick mouthfeel with awesome lingering hoppy aftertaste. This would be incredible after a year or two of cellering, which is exactly what I plan to do.

This was thouroughly enjoyable. Big chocolate and coffee notes mixed with a nice light hoppiness. Malts help add a nice deep complexity to this stout. Real smooth and very enjoyable.

This is 2008. Fair impression of what I think Yeti must be like with no oak - brash dry hoppiness, fat coffee-like roast-y rich malts, nice tones of dry ripe dark fruits like raisins and prunes. Drinking this cellar cool the alcohol is impressively warming but not harsh. Cooling it knits the flavors a little. Hops seem a bit tannic though, like chewing a green stem, per American tendency. Mostly succeeds by it’s excess.

This one pours a thick, viscous material with a jet black color. The head is very small and tan initially but rapidly dissappears leaving nothing but faint traces that it ever existed. The aroma is a little weak, but I detect some chocolate and coffee notes and a faint burnt, roasted malt character. The flavor is full of roasted malts with big chocolate and coffee flavors. The finish is full of coffee and bitter undertones. This one is not quite on the Imperial Stout level as far as flavor and robustness go, but it is definitely a very nice stout to drink.

Pours a very deep dark brown, pretty much black and almost completely opaque with only the slightest mahogany edges and a huge foamy coffee colored head that has great retention, slowly fading into a lasting ring that leaves sporadic lacing. Roasted malt aroma with hints of roasted coffee, chocolate, nut, alcohol, dark fruit, fig, licorice, peppermint, oatmeal, toffee, caramel and some piny citrus hops. Mmmmm this is very promising. Silky smooth malt mouthfeel with a decent amount of roasty flavors along with some spiciness, alcohol warmth and a surprisingly prominent hop presence. Roasted malt flavor with hints of chocolate, peppery spice, oatmeal, coffee bean, toffee, caramel, dark fruit, fig, alcohol, bourbon candi sugar and a very surprising, yet excellent bitter hop note.

shared bomber on 4/6/08, rating from notes taken. pours a dark black with a tan head. bitter up front, medium body, slight coffee notes.... great finish. Overall, not a bad Imperial Stout, but a bit to thin for me.
