Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

22 oz. bomber from 2006. A thick, opaque black pour with a big chestnut head. An incredibly hoppy aroma for an imperial stout. Reminds me of a number of the Three Floyd’s beers. Very resiny aroma with lots of hops, some dark coffee, chocolate, vanilla beans and roasty malts. The body is thick, creamy and silky smooth. Lots of semi-sweet chocolate, caramel, roasty malts and some cream upfront. Dark coffee follows along with a bitter, drying hoppy finish. Just a bit of a burnt taste at the end. I’m impressed.

Pours dark like Godiva chocolate with very little head. Aroma was not real strong on draft. It had various chocolates, caramel, molasses and pine. The taste had a wonderful chocolate and coffee combination. I could not quite place the chocolate taste which was the best part. Very chocolately on the palate. I had this aged in a Jack Daniels Cask which brought out some vanilla as well. Quite good.

Malty choco-hop aroma with a black color. Hoppy mocha flavor that seems a little too thin. Otherwise it's wonderful.

Smells like chocolate and coffee. Pours nice dark brown with good brown head. Tastes the same, mainly coffee aftertaste. Slightly bitter but full of flavor. Doesn’t go down as smooth as I would like. Good flavor and good beer.

750 mL bottle. Deep, dark copper brown; almost black. Nice dark beige head. Black coffee and dark chocolate rule both the aroma and the taste. Alcohol is not apparent in the aroma, and only mildly so in the flavour. You’d never know that this is 10%. No astringency. The finish is lightly bitter and alcoholic. Mouthfeel is full and almost creamy. Nice beer.

[2006 bottle] Pours a serious black color- aroma is that of sweet chocolate-covered cherries. Flavors are mostly dominated by coffee and chocolate, roasted malts and dark dried fruits. Kind of a thin mouthfeel, compared to some Imp. Stouts out there these days. I was definitely intrigued by the hop presence in this brew. It seems to pair very well with the strong coffee and malts.

This was a dark black beer with a short brown head. It looked delicious in the glass. The smell was faint but nice and enticing. The taste was a little coffee and a little chocolate. I didn’t really taste the alcohol at all.The drinkability on this one was awesome and I wished I had another glass. It would be nice to buy this locally but oh well. Provided via a trade by BeerAdvocate ppoitras, this big beer series member came in a 22 oz. brown bomber. The beer pored just a shade brown of pitch black with a khaki head. The body was opaque with no highlights at the edges. The aroma was like a fine mocha espresso. The taste was dry and bitter, once again reminding me of a strong dark coffee. Very roasty and burnt with a hint of sourness, this beer was clearly not trying to appeal to those with a sweet tooth. The body was a bit thin for an imperial stout, and the alcohol was not quite up there. A couple of more percent ABV would have made this spectacular.
