Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Poured opaque black with a medium sized, tan head that left nice lacing on the glass. Aroma was somewhat vinuous, leading to roasted malts, some cocoa, piney hops, dark fruits, and alcohol as well. Taste was bitter roasted malts up front, with smoke, sweet chocolate, dried fruits, vanilla, more piney hops, and a touch of alcohol in the finish.

Black color with a medium head that quickly disappeared. Slight coffee aroma with a lot of earthy hops and just a bit of the citrusy Cascade hops. Strong, roasted malt bitterness. A little oaky. Not really deep in the flavor department, but it tastes great.

2003 bottle generously provided by OldGrowth on 5/28/2005. Opaque deep, dark brownish-black colored body with a moderate amount of tan head that recedes to cover/ring. Smells of chocolate with some piney hops and bits of dark malts. Not overly aromatic, though. Flavor of milk chocolate, piney hops that have faded nicely and leave more flavor and little bitterness. Quite dry on the end, with some notes of peanut brittle that linger on. Medium-full body, not over-the-top in anyway. Has aged very nicely. Wonderful, soft creamy mouthfeel with low, natural carbonation. No alcohol detected.

2008 bomber. Pours a nice deep dark brown almost black as it pours- looks black in the glass with a thin beige head and some spotty cobwebby lace. This batch is as hoppy as any other- tons of fresh hops all the way around in the aroma and flavor- aroam is intense with mostly pine and some citrus hops- dominated again by Columbus, even though others were added this year- tons of pine hops and pine needles, sap and lots of chocolate malts- hints of roasted barley as well. Sticky sweet flavor with lot sof herbal and piney hops flowery, tons of dark burnt malts and lots of crystal malts give it lots of sweetness- licorice hints as well as oak even though there is no barrel-aging- some vanilla hints with the chocolate. Body is pretty big and has a big mouthfeel that feels a bit heavy, but has a huge raw piney bitteriness in the end which I kind of like, but some may not in an impy stout. Reminds me a bit of the old troegs oatmeal stout that was also heavily hopped with columbus. Nice beer, but nothing too over the top or unigue about it.

(22oz bottle) Pours a large, foamy, brown head and an opaque body. Nose of roasted malt and coffee. Pleasant oily texture and smooth across the palate. Not a complex, multi-layed imperial stout but good to style. Good.

[Bottled, thanks to Kramer] Black colour, small brown head. Not all impy in aroma lots of grape, peach and a nutty woodiness(Centennial) but also tar and licorice. Sweet mouthfeel, favourably so, balanced flavour wih a fiery licoricy finish that comes late. Also, dried fruits and plum comes late. Very late. Solid bitterness, that also comes late.

Bomber shared by aplusbreaks poured a translucent dark brown with a small lingering brown head. Aromas of bitter chocolate, vanilla, roasted malt and dark fruit. Palate was medium bodied and smooth. Flavors of dark chocolate, carmel, vanilla and light oak with a smooth lingering roasty finish.

Pours opaque with a small dark brown head, lined lacing that diminishes to spotty lace. Aroma is hoppy pine and flowers, dark roasted malt, coffee, toast and perfumey alcohol. Dark bitter chocolate, roasted malt, toast, doughy yeast, flowers, perfumey alcohol and wood, cocoa finish. Dark bodied, dry but smooth palate.
