Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

22oz bottle; Aged 6 months... almost... and it was tough to wait! Pours out, not surprisingly, oily black with a nice creamy mocha head. Aroma of roasted hops with a little bit of a citrus presence. This beer first tastes like your traditional stout - chocolate/coffee - but then it hits you with the delicious hoppy sweet finish. Great beer!

~’09~ 22oz. Big black stout! It’s got a roasty aroma but not in the typical coffee sense. While it may have a slicker mouthfeel than other more-chewy Impies; there’s still a lot going on! Choc.y malts w/ various nutty flavors and the hops are ever present. It’s a very solid stout.

Bottle: pours dark black with a dark tan head, aroma is surprisingly hoppy, some pine, I think there is some chocolate aroma as well, taste is minty chocolate, malt, coffee, nice mild bite in the finish. Very interesting and unique beer. Good recommendation by the guy at Oak Tree.

2006 750 ml. bottle. Black, opaque, with a medium but durable tan head. Large hop presence of pine and citrus complemented by burnt coffee and bitter chocolate. Full body, medium carbonation, and a rich mouthfeel turning to a slight astringency. Dark brown sugar sweetness cannot compete with the peppery bitterness that provides a long dry finish. Excellent.

Aged 6 months. Pours jet black into a snifter. Tan head quickly recedes to skim surface and rim. Tart chocolate aromas. Smooth and creamy with upfront slightly sour dark chocolate and hops with a lasting espresso finish.

Bottle. Pours pitch black with a small brown head. Roasted and malty with notes of dark and dried fruit, hops, spices, coffee, bitter chocolate and a slight alco burn in the end. Very nice.

2006. very crisp, full tasting, velvety chocolate, a good little hop bite, damn i am running back to the store copping the last 2. finally a big beer that is worth buying and dont break a 5

Bottle: Near black pour with a finger of creamy brown head. Nose is simple and intense with roastiness, chocolate, and an overal sweetness. Tastes rich in roast, coffee, and chocolate. A faint bit of smoke with bitters in the trailer. Smooth, balanced, and rich in flavor. Huge. Thanks to my secret santa from last year!
