Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Dark black with a reddish tinge. Thin but nice looking dark head. Heavy chocolate aroma with licorice. Plums in there also. Palate is oily and sticky, hoppy. There must be many hops in here as they manage to come through a bit in the finish too. It would be nice to try aging a bottle of this. Had this on draft at McGreg’s, what a treat. Original rating looks accurate.

Bottle: Pours a dark black color with a thick tan head and nice lacing, excellent carbonation and head retention for a beer of this type. The nose is very hoppy, almost annoyingly so, that it almost overpowers the alcohol and the roast. Well, the alcohol is certainly there at least. The flavor is a bit like soy sauce with the ripeness, but the hop bitterness and dry roast astringency get their word in too. The finish is long and pleasant, very nice body and sweetness level blends with the hops. A bit of delayed alcohol sting on the back of the tongue. Nice Imperial Stout, but it’s also like a black double IPA if you can see it that way. I like it. Thanks Ken!

[Bottled, thanks to Kramer] Black colour, small brown head. Not all impy in aroma lots of grape, peach and a nutty woodiness(Centennial) but also tar and licorice. Sweet mouthfeel, favourably so, balanced flavour wih a fiery licoricy finish that comes late. Also, dried fruits and plum comes late. Very late. Solid bitterness, that also comes late.

From a bottle at BBB63's whom I thank profusely for this sample. This brew poured a small head of fine to medium sized beautifully colored dark brown mostly lasting bubbles that left behind a fair lacing and a opaque black colored body with no visible carbonation. It had a very nice aroma of dark malt, molasses, chocolate and coffee. Fairly complex and wonderful. This thick brew went down smoothly with a slight tingle and a mild hop afterbite. The flavor was of dark malt, mild coffee and mild hops. A very nice brew indeed that I would love having another bottle of.

Dark Brown with Dark Sandy to Tan Head. Nice Sweet Malt, Roasts and Hops on the Nose. Medium Mouthfeel...Wonderful and Robust. Nice Hearty Malt Foundation, Coffee Roasts and Some Chocolate and Really Nice Robust Hops to Balance This Impy Out. This is Quite Simply a Wonderful Example of What an Imperial Stout Can be All About.

Pours dark brown, with a light brown head. Aroma is roasted malt, hops, chocolate, and coffee. Flavor is chocolate, roasted malt, hops, and coffee. Nice, but a bit too hoppy.

Thanks to rater The_Beer_God for shipping this lovely elixir my way.

This was the third ratable beer of the night for Joey and Matt’s first annual Porter / Stout till you drop…
Poured a dense ink black body and an amazingly resilient dark tan head. The aroma and flavor is a mass of toffee and chocolate malts; sweeter hints of raisin and then bitterness of prune in the beginning... Light notes of toffee and molasses but most abundant were suggestions of mildly bitter chocolate and cold coffee. On the sweeter side of Imperial stouts but the bitterness does show itself in the arid finish, a remarkably creamy palate….. Overall a Slam Dunk for this Imp Stout!

Malty choco-hop aroma with a black color. Hoppy mocha flavor that seems a little too thin. Otherwise it's wonderful.
