Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

22oz bottle. 05.31.04 Pours jet black with a thin, marbly head. Aromas of roasty cocoa, coffee, dried apricot, cherry. Flavors are huge, popping mouthfuls of bitter, roasted goodness. Not even close to sweet. All biting, bitter, harsh, and delicious! Finish is slightly astringent, madly bitter, somewhat violent. Awesome beer! Dangerously drinkable.

Pitch black, fine brown head. Creamy and roasted aroma, full and sweet, tones of coffee and chocolate. Full flavor as well, sweet chocolaty and creamy with a good hoppy bitterness. Very well blanced and a beer I could drink again and again. Simply excellent!!!

Very nice. Black with weak tan head. Chocolate and coffee to the nose. Lighter than most Imperial Stouts but still full of flavor and texture. Flavor was of roasted coffee and dark chocolate. Good stuff.

2006 bomber, with a HUGE thanks to Clark!
Moderate viscosity yet opaque in the snifter with cherry cola colored edges. Some beady bubbles form a wrung while an amoebic sheaf in the center makes up the rest of the head. Consecutive pours yield a tight-packed, deep, thin tan head which reduces soon thereafter. Aroma is striking and dramatic. Black patent, bittersweet chocolate, black licorice, sugar-starved espresso grinds and dried black currant scraped into peppered prune juice. Hints of burnt brown sugar bridge the nose to mouth. This one’s a big boy. Dry, profound flavor abundance and a downright blackened prowess. Black licorice and a burnt, bitter peppercorn persona. A sweet dark dance of sooty french roast snatched from the burr grinder, and luring caramel integrated into stark dark chocolate toffee lozenges. Kissed by flame and broiled to perfection. It’s like steamrolling the tongue onto a barista’s countertop. Dark, heavy palate load and it’s difficult to even push the tongue through to get a crack at it. This bottle’s a youngen, but damn does Smutty know how to walk the line of aggressive balance. Dry finish, ridding the palate and begging for liquid replenishment. This one mandates slurping to catch it in the mouth, and once it’s there, it’s oh so good to suck down.

22 oz. bomber from 2006. A thick, opaque black pour with a big chestnut head. An incredibly hoppy aroma for an imperial stout. Reminds me of a number of the Three Floyd’s beers. Very resiny aroma with lots of hops, some dark coffee, chocolate, vanilla beans and roasty malts. The body is thick, creamy and silky smooth. Lots of semi-sweet chocolate, caramel, roasty malts and some cream upfront. Dark coffee follows along with a bitter, drying hoppy finish. Just a bit of a burnt taste at the end. I’m impressed.

Bottled. Pitch black colour, mediumsized brown head. Aroma of conifereous woods, alcohol, licorace, strong hops and roasted malts. Flavour is pitch, roasted malts, old coffee, alcoholic sweetness. Wellbalanced and lovely.

This beer pours syrupy with about a quarter inch of head that quickly disappears. The aroma of this is surprisingly very hoppy. I didn’t read the bottle other then the name so this was a good surprise. The aroma is Cascade with some malt in the background. The flavor is similar to this. The first flavors you get are the Cascade hops and then the beer charges into your typical imperial stout flavors (chocolate, coffee, syrupy, delicious). The beer has a heavy body with low carbonation, which is perfect. I really enjoy this beer and will have to move it into my rotation more often.

Found this years Imperial Stout tto be be an excellent improvement over the outstanding brew produced in previous years. The cascade hops blend nicely to produce a very hoppy but well balance dark stout. This is a great tasting beer fresh that gets better with a few months aging.
