Commercial Description:
After a one year hiatus the Imperial Stout is back in action. We figured that after catching a bit of flack for its absence we’d have it return with a bang. We bumped up the starting gravity from 20° P to 24° P. This allowed the beer to finish just over 10% ABV. Like this year’s Barleywine, we’ve decided to play with the hop character, specifically the dry hop presence. Trying to avoid the fiasco of my previous attempt at adding pellets to the fermentor, I did what any good manager would do: I made Charlie add them. He had the advantage of being able to add the hops directly through a top manway and so his besting me in this challenge is not necessarily a sign of his superior brewing skills but more a reflection of my adventurous, try anything spirit (or at least that’s the story I’m stickin’ to). The Charles added 44 lbs of Cascade, split evenly between two batches, or about half a pound per barrel. We then transferred the beer onto seventy-eight pounds of an even mixture of Centennial and Columbus whole flowers, about one pound per barrel. The beer is a little top heavy in terms of the hopping but it seems to be smoothing out a bit as it’s aging. I’d give it six months or so, if you can wait that long. If not, hey, enjoy it anyway.

Quite black. Chocolatey aroma , hoppy and roasty. Very hoppy palate, with lots of roast and coffee notes. Two-dimensional but I do like the flavours.

Re-rate 6/7/02: Much more like an Imperial Stout now that is has had 8 months to relax in Chateau Volgon. Deep dark fruit/wine character developing. Still, an Imperial Stout with 7.1% isn't going to be able to compete with the big boys. 11/27/01: It is a rather mellow Imperial Stout. This creamy black liquid goes down smooth and warms you up. After factoring in the alcohol content, price and approaching winter, I realized that I must buy every bottle in New Hampshire. Sorry everyone!

Nice and thick auburn brown liquid that clung to the sides of the glass underneath a deep brown, frothy and short-lived head. Aromas of coffee, chocolate and roasted malt. Bitter coffee and chocolate flavors are predominate with some prune, raisin and date flavors showing as the beer warms. No apparent alcohol flavors or aromas. Cettainly the malty flavors dominate over the lightly perceived hops. Finishes sweet with a long aftertaste. Maybe I enjoyed this more than I should've considering I haven't had a really nice, big beer in a couple of weeks. Enjoyable.

Whoa, nelly. This stuff is strong. One of the stongest beers I’ve tasted, since I’m not a fan of big beers. I thought I’d give it a shot because I love most of the stuff from this brewery. Deep, dark, bitter roastyness. The notes get darker towards the finish: plum, licorice, coffee, Worchestershire sauce, etc. Excellent body as the beer warms to room temperature. The dark and roasted notes meld together beautifully. A really fine treat. I enjoyed it.

Bomber: Mocha coffee aroma, lots of malts in there too. Pours the proverbial jet black with robust tan head. VEry very silky palate. Lots of coffee throughout. Alcohol is hidden well. A nice (imperial) stout.

Bomber ’06 vintage - Pours a midnight black with a rapidly fading head. It seems that the year of aging has brought the hoppiness down a bit from what others have noted when the beer was new. The mellowing, I think, helps to marry the roasted maltiness with the hoppiness, creating a well balanced character. There is a chocolatey note, but not a sweet one. More like burnt dark chocolate. I like.

Very dark beer out of the bomber, with a thin frothy brown head. Molasses sweetness with some burnt grains and chocolate in the nose. Lots of burnt grains, coffee, dark chocolate, with a nice dry hop finish. Really clean, dry impy stout.

This one pours a thick, viscous material with a jet black color. The head is very small and tan initially but rapidly dissappears leaving nothing but faint traces that it ever existed. The aroma is a little weak, but I detect some chocolate and coffee notes and a faint burnt, roasted malt character. The flavor is full of roasted malts with big chocolate and coffee flavors. The finish is full of coffee and bitter undertones. This one is not quite on the Imperial Stout level as far as flavor and robustness go, but it is definitely a very nice stout to drink.
