First, I think this was too young. It is sugary sweet, even in a style that tends to be sweet, and it would probably benefit from a year or two in the cellar. But this is still something special. Very nice fruit and malt aroma with Belgian yeast. Thick and heavy palate with loads of malt. Fruit and yeast in the flavor, lots of malt, and exceptionally full palate and great, smooth mouthfeel. The aroma has a lot of yeast, raisin, and some caramel. The taste is really sweet--like syrup almost. Once again, the raisin was very prevalent, with the yeast much more toned down than in the aroma. Herbal tea and aromatic wood in a bittering first waft; rising, a warm sweetness of honey, real maple syrup, apple, golden raisin and pear, powdered with a dusty, hazed peppering of allspice and ground anise. Very sweet champagne, candy sugar and honey flavor with lots of tart apple and pear presence, and brown sugar; fairly warm, but never hot, with some spirit inspired sweetness imparting a soft touch throughout. Dry fruit peels, black licorice, spiced dark bread and general warmth in the mid palate; full, syrupy and spritzy mouthfeel of frothy, generous and coating texture. Finishes dryly with a firm dessert muscat sweetness that lingers gorgeously. Dense and overly sweet throughout; though well crafted, it seems tilted toward a bombastic sweetness, and some tempering in the cellar might leave it more polished and more settled. Thanks Chris! Aroma of champagne, white wine, yeast, malt, wood, licorice, grape, cobwebs. Large off-white head that mostly diminished and left little lace. Pours tan but looks black in glass. Flavor is sweet with an earthy woody presence. Also wine, ripe fruit, yeasty cobwebs, and a slight alcohol presence. Palate is medium bodied with a lively carbonation. Nice brew with a complex aroma, good flavor and high ABV that’s well hidden. Top notch.
