Pours a lightly murked golden and rising white foam. Billowy. Flavor is fresh and riveting. A great bouquet of iris blossom, rosewater, and sweet orange candy. Almond dust and refined brandy sugars show through. Savory and herbal, yet floral and sweet. Malt sugars gracefully help keep all the delicate floral notes alive. Pear skins and reduced nectarine juice. It has that nice phenolic Saison yeast balance in the back sweep. Delicious, bright and refreshing.

Fruity, spicy aroma including the likes of apple, pear, light cinnamon, and clove. Medium bodied and semi-sweet with mild hop bitterness. Lots of spices in the flavor giving the beer an almost mulled-wine like note. Spiced pear and toffee also came out in the flavor along with a dash of salt in the middle. Aroma is sour tropical skittles, flower, melon. Similar flavor, add pepper, mint, and a bit of lavender. Finishes mildly spicy, quick and refreshing. The aroma is pretty bold with candi sugar, dark fruity esters of hard candy cherries and prunes to go along with lots and lots of spices, some sweet honey and a hint of herbs. The taste has a solid bolt of sweetness going along with fresh picked rose pedals and honey. I also get tasty notes of spices and additional dark fruity esters. Aroma is very floral with spicy yeast and a hint of sweet malt. Taste is the same as aroma with the sweet malt realy coming through. Medium silky mouthfeel with a mild amount of bitterness and spicy finish. Very good. LilBeerDoctor (475), East Setauket, New York, USA Aug 12, 2008 Bottle from the brewpub. I was very excited to try this beer and it didn’t disappoint. Pours a burnt orange with no head. Aroma of lots of spices, vegetables, pumpkin pie, and lemon meringue. Flavor most strongly of pumpkin pie (canned pumpkin), some cinnamon, nutmeg, and citrus. Sweet and spicy. The flowers add interesting flavor to this beer and it was quite unlike other saisons I’ve had before (except for maybe some Fantomes). Definitely worth a try (and I’d like some more).
