The aroma is apricot, tangerine, orange, bread and honey. The flavor is moderately sweet, honey, spice, herbal hops and lots of fruit (banana, peach, tangerine). Medium/full body is hefty, but high carbonation helps. Just a touch of yeast atringency on the finish. When I think of Saison, I think dry and hoppy. This is not. The aroma was funky fruit like pears and some cinnamon. A little bit of pleasant leather. The taste has some more dank funk with pears and cinnamon. There is a little bit of bread crust. There’s large yeast deposits visible in the bottom of the bottle, so decant carefully. The flavor of this beer is a very complex one, I’m able to pick up hints of citrus, grass, yeast, and a touch of earthy bitterness hiding in the background. Aromas of cloves and bananas scattered in a wildflower meadow, many spicy and musty notes ringing in quiet, distant harmony. Many dimensions of flavor. First of iron water and mint-leaf cocktail, then daisy petal hops, dry, subtle apricot and peach. A sweet candied almond and cashew disposition midway through. Finishes on a salty rush of sun-dried tomato and balsamic vinegar on sourdough. Clean and vitalizing palate. Intriguing to every sense, vibrant and fresh. Thanks Eric! The aroma is a pleasant mix of yeasty, fruity esters, banana and noble hops. Flavor has notes of light caramel, honey, banana, clove, flowers, orange, lemon zest, grass, hay and light pepper- very nice. Kind of sweet but not too sweet. Nice lemony citrusy hop character. No brett/horsey notes. Finishes dry. Has very high level of carbonation, almost prickly - would be nice if that was toned down a bit. Great head retention. Leaves cloud-like lacing on the glass. Slightly hazy gold straw colored beer. Spicy aroma; yeast, old ground mace and coriander with a slight earthy hint of tumeric. Flavor is not as impressive; medium hearth baked bread with golden raisins and candied citron. Maybe a little too much carbonation. Aftertaste not very nice.
