Commercial Description:
This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Bottle (small sample). Clear red-amber pour, white head. Sour/vinegar nose with some caramel. Tastes like fruitbread. Decent, not great.

33 cl bottle from Belgianshop.com. Pours deep brown with a big steady beige head. Strong fruity malt aroma, nuts and yeast. Taste is toffee,caramel,chocolate. Thin body. Strong alcohol aftertaste.

On tap at the Draft House - Mahogany pour with a very small head. Sweet, with some alcoholic bite. Pretty sharp and slightly spicy. Taste is syrupy and too sweet. Whiskey-soaked cherries and real sour malt. Syrupy and glass-coating with a bitter aftertaste. Too much alcohol, which masks whatever flavor is lingering below.

bottle, Village de la Bière Strasbourg 2008. Brown colour with a red glow, small beige head. Aroma of rotten fruit. Malty background with flavours of fruit, moldy and rotten fruit, hints of orange and spices. Flavours of chocolate and caramel fudge/toffee are also detectable. Rather thin-bodied for the strength with a slightly unpleasant alcoholy finish. If it wasn’t for the thin flavour with the slightly unpleasant touch of rotten fruit I’d have quite enjoyed this.

Bottle from beermerchants.com. Pours a clear brown colour with a beige head. Aromas of chocolate, roasted malts, sultanas, dark fruits, toffee. Flavours of dark chocolate, caramel, figs, brown sugar. Bitter-sweet warming mouthfeel. Finishes sweet, slightly bitter and warming on the throat. Excellent Christmas beer.

750 ml. Hazy amber body,off-white, light tan head slowly diminishing into frothy pools. The aroma has notes of plum, fig, cinnamon, cookie, anise, mustiness and orange peel. The flavor is moderately to heavily sweet and lightly bitter. It finishes moderately sweet and moderately bitter. Medium body, velvety/sticky texture, lively carbonation. Dry with some alcoholic notes in the finish. This ale starts sweet, but turns sharp, bitter with tastes of licorice and mold. Nice to find a Belgian Christmas ale that isn’t too sweet.

Nice winter beer. Had with James. Pours a caramel color. Aroma of roasted barely, malts, and spices. Flavor is well balanced with the roastiness and the spices combined to make an enjoyable winter brew.
