Commercial Description:
This beer has a generous head - compact and firm. Its slightly brown colour is the result of the roasted barley. It has a dark ruby brown colour and a very intense aroma. The aromatic herbs and spices used greatly enhance its delicious smell. This beer is full-bodied with a smoothness that is the result of the synergy of caramelized malts, carefully controlled fermentation and long cold storage. St Feuillien Cuvée de Noël has a very subtle bitterness that is the dominant flavour in this harmonious ale that strikes a perfect balance between all the different ingredients.

Nice winter beer. Had with James. Pours a caramel color. Aroma of roasted barely, malts, and spices. Flavor is well balanced with the roastiness and the spices combined to make an enjoyable winter brew.

On draft at Paradiso in Georgetown. Pours dark brown with a creamy off-white head. Tastes like Christmas: spices, fig, caramel, and some hop character. Overall pretty good winter beer.

On tap at Le Poechenellekelder, Bruxelles. Pale brown coloured, medium to big sized beige head, malty caramel nose. Moderate malty, very fruity and slight alcoholic with notes of caramel and spices. Warming alcoholic finish. Despite 9%ABV very smooth and easy-drinkable Noël.

Bottle that I picked up at Dranken Geers, Oostakker, Gent, Belgium, 31-10-09 consumed 10-12-09 Pours a wonderfully reddy/brown colour, its crystal clear with a white head and a lacing of film across the top. Rich and full bodied, fruity, very christmassy with dark alcohol steeped fruits, raisins etc showing, some spiciness also there. Nice stuff. A6 A5 F8 P4 Ov15 3.8

(bottle - corked & caged 750 ml) Dark ruby pour with a creamy tan head. Aroma is very sweet, malty, and fruity with a lot of hints of apple, pear, and plum. Some caramel and toffee as well. Flavor begins with a sweet and malty with a mild fruit middle. Some mild spice and a lot more fruits come through at the end and leave a mildly cloying but rather sweet malt finish. Alcohol is well hidden. Very tasty.
