Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

Bottle (750ml). Via trade with Boutip. Deep hazy copper with a large foamy-rocky lasting beige head. Caramel roast malt, peppery sweet spices, lots of yeast, some treefruit and chocolate on warming - seemed a little metallic, but I think that’s the yeast - like a saison/belgian winter ale mashed up. I really like the flavour of this - like a malty Christmas spicey beer with chocolate non-bitter roastiness and a nice infusion of mild dark cherry sourness and herbal goodness - this is very nice. Decent body (finishes a little thin) and plenty going on (bitterness, syrupy somewhat lively maltiness) even if it’s not hugely balanced in the end. Thanks for this one Phil!

Caramel, toffee, honey, grass, jasmine and melon in the sweet tannin-full, tea-like aroma. Clear, deep brown coloured body is crowned with a large, off white/tan coloured, small-medium bubbled head that lasts well and leaves some lacing. Caramel and toffee flavours with a slight sour, spicy note. Herbal, grass/hay-like flavour lingers in the aftertaste. Quite malt dominant. Medium body with prickly carbonation that is a bit strong for my liking. Tulip glass. Cellar temperature. Bottle (BB 02.06.07, Depanneur on the corner of St Urbain & Villeneuve, Mar-05).

Belle couleur bourgogne avec un joli collet moyen. Petit arome épicé, un peu malté. Goût, un peu sûr, épicé et fruité.

Robe rousse très claire surmontée d’une mousse beige généreuse. Arômes légers de métal et de caramel. Saveurs de lime, de métal et de houblon amérisant.

Amber color, with a rocky beige head, leaving nice lacing on the glass, with a bready, caramelized malt nose, sweet nuttiness accent, grainy note, with a hint of buckwheat cereal in the aroma follows through on a medium-bodied palate, with a malty character, with breadyish note, brown sugar, grainy malt accent, hint of molasses, and fruity leading towards an alcoholic warmth and malty finish.

Clear redish-brown with a very small white head. Minimal lacing. Looks boring. Very little aroma. 8.5% alcohol well hidden. Thin body, above average carbonation. Fruity (apple & red fruits) with some cider-like acidity. Drinkable but not very pleasant. I’m almost tempted to say that the French cannot make good beer but all generalizations are false including this one. 750ml Bottle.

bottled as the st. sylvestre "flanders winter ale", with an interesting metal seal for the corked 750. a funky aroma of german-smelling hops, and a spicy vinous malt aroma. since the beer was labeled flanders, i assumed it would be sour; however, it’s more of a french-style brown ale than anything else. flavor is much more mild than the aroma, but despite both, the 8.5% is hardly detectable. more of a fall beer than a winter beer....does that make any sense?

Bouteille-D’une belle couleur brune-rubis avec une mousse beige qui se dissipe rapidement. Odeur fruité et de houblon. Goût caramalisé très doux.--BottleA brown-ruby ale with a beige head dissipating rapidly. Fruity aromas. Caramalized taste very sweet.
