Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

Bouteille de 750 ml. La bière se présente avec une robe rousse et un col de mousse fauve généreux et durable. Au nez on découvre des arômes de cerises confîtes, de sucre d orge, de gâteaux aux fruits secs et d alcool. En bouche le corps est rond avec une effervescence moyenne. On goûte des saveurs de pain brun, de cerises confîtes, d alcool et d orge grillé.

Bouteille de 750 ml, sous le nom Brassin d’Hiver. Arômes de caramel et de fruits rouges. Très belle robe rouge bourgogne et très belle mousse qui dure éternellement. Moyennement ronde en bouche, un bon malt caramel accompagne les fruits rouges. L’alcool est bien dissimulé. Arrière-goût très court.

Sampled during Minnesota first annual Sourfest as St. Sylvesters Flanders Winter Ale and shared by JK. Pours a semi-clear amber brew with a fast dissolving off-white head that dissipates clean. Aroma of powdered caramel malt, some tart berries, a hint of years and some vanilla. Taste is medium bodied, light carbonated with some tropical fruit, some citrus and alcohol. Finish is semi-dry, slightly metallic with an alcohol and tart berry aftertaste.

Bottle.
Pours a nice brown shoe polish brown with an aroma of melon, cranberry, and dark fruit. Flavor is dusty cranberry with a touch of cranberry. Average mouthfeel. I’ve had better.

Deep orange/amber in colour, thin off-white coloured head, light lacing. The aroma is plummy, acidic, light sourness, some toffee. The flavour is tart and sour, a bit thin, light citrus, some plums and a bit of alcohol. Lightly sour and thin mouthfeel, medium/light body, medium carbonation. Finishes thin, lightly alcoholic.

I think that this spent a bit too long in the bottle. Its not horrible but its really showing some age.

Amber with no head. Aroma has light fruity esters and ton of yeastiness, not much else. Flavor consists of rotten fruit, and not in a good way. Not much else going on. Thins out at times, just very bland overall.

Tasted at Bill’s Sour tasting. 750mL from deftim13. A very hard beer to find in the ratings. Luckily, WeeHeavySD found it first for me. Amber color. Fruity aroma. Mild sourness. Easy to drink. A little dry.

750 from deftim at Bill’s sour tasting. Poured oragne and dark with a tan ring. Nose was sweet. Taste is sweet tart and bitter. A very nice brew.
