Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

This was a nice surprise. The cork exploded out of this thing and poured a dark but clear red-brown with large head that eventually completely disappeared. Spicy aroma with some tart cherries. The palate is pretty nice with a lot of soft carbonation. The flavour is light at first but a lot of spice and semi sour cherry and some funk.

Bouteille de 750ml, avec bouchon de liège, reçue en cadeau. Arôme: Odeur de caramel fruité et d’épices. Apparence: La couleur est ambrée très foncée avec une faible densité de bulle. Présence d’un large col crémeux et d’une large dentelle sur le verre. Saveur: Goût de caramel et d’épices avec une pointe de cerises. Durée moyenne de l’arrière goût. Palette: Le corps est moyen avec une texture légèrement huileuse. Moyenne effervescence en bouche. Légère présence d’épices en arrière goût. (Rating #1380)

A Mes rate: Gravicask @ Pigs Ear.
Vivid orange brown with lots of cake and spice plus some sulphur in the background. The brewers characteristic yeast is very evident in the flavour along with plenty more cake and some extra sweetness from god knows what. Run of the mill but I enjoyed it more than Ian and Mark.

Bottled at Pigs Ear. Served way too cold and we didn’t have the patience to let it warm up enough. Amber coloured with a little ring of off-white bubbles. The aroma is a little sweet with some caramel notes. The taste has caramel in a bag of yeastiness. Way way overcarbonated and hence a struggle to get through.

75cl bottle at Pig’s Ear BF 08. Deep russet with thin beige head. It’s got some red berry fruit, bit of stale malt which is unfortunate. Gets better, bit too carbonated, bit too cold.

bouteille de 750ml avec bouchon de liège très belle couleur brune avec des reflets cuivrés, la mousse est brunâtre, elle dure un petit bout. odeur fraiche épicée, un goût prononcé d’épice, belle amertume, forte en bouche l’alcool se fait sentir.

750ml bottle picked up in Montreal. This beer is truly exceptional. Light and fluffy Christmas beer. Delicious yeasty brown malt with a tangy fruity finish. Completely mellow, perfect flavor and body balance. One of the best Christmas beers out there.

Thanks to JK for sharing. Copper color with sweet malty nose. Raisons & cherry in the aroma. Sweet cherry flavor with a hint of sour and some spice.
