Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

Appearance: Pours a ruby-hued body with an effervescent, off-white head. Smell: The aroma delivers a nice amount of caramel and spice, particularly ground cinnamon, as well as dark fruits. Taste: Sweet dark caramel melds with brown sugar, sour cherries, and, I’m tellin’ ya, cinnamon. Finishes dry and chalky with a light bitterness. Mouthfeel: Medium-bodied. Tight, frothy carbonation. Drinkability: A decent beer that delivers a small measure of merry Christmastime to the hot, bawdy month of July.

Malty aroma with dark fruit. Low hop aroma.Doughy, earthy yeast aroma.ight light brown head with good head retention and lacing. Reddish brown color, clear. Slight tartness, malty fruitiness. Spices- citrus and peppery. Low hop flavor and bitterness. Long fruity finish. Medium light body thin peppery mouthfeel. Very good!

Pours a deep amber color with an off white head. Aroma is malty, honey, orange, and spices. Flavor is malty, caramel, spices, some orange, and a light bitter finish.

Pours a transparent copper ruby with a small, airy light tan head. Aroma of lightly sweet biscuity Belgian malt along with some spices and sweet orange peel with a hint of tartness. Body starts fairly full and well-carbonated with sweet caramely Belgian malt and some light fruits with a hint of drier cork flavor. A pretty decent Belgian winter ale.

dark amber color, big frothy head. Aroma of malt, and slight skunk. FLavour is very malty, and bready. It’s not bad, but its not amazing. pretty middle of the road.

This was the last beer of the evening, and the notes that I took at that point were both brief and contained hyperbole...negative hyperbole...which I don’t think does this beer complete justice. It is a balance of mild sourness and some light caramel malty sweetness. And that light brown caramel malty sweetness (like you’d get in a dunkel weiss) is just not a big hit with me...it is the kind of flavor that gets downright nasty comments in my notes at the end of the night, but it might work for you. This beer pours a red hazy color with a tightly bound-up head composed of uniformly sized tiny bubbles. The aroma is a mild sourness. The flavor is a sour cherry kind of sourness, balanced with the malty sweetness that I don’t particular care for. Not horrible, but not for me.

Bottle. Amazingly difficult to open... I needed a screwdriver and a corkscrew. A gentle pour culminates in 5 inches of off-white head and a half inch of reddish brown beer. Quite a dirty (earth, yeast) aroma. Lively carbonation. Quite yeasty and dry on the palate. Just a hint of sour cherry and oak. Earthy and grassy. Only slightly malty. Really not all that bad but too yeasty and dry for me. I’d like to revisit in a couple of years to see how it develops. I do think that it has potential.

750 mL bottle. Poured a coppery amber with a creamy beige head and lots of rising carbonation. The aroma had an overriding sour aire to it, which was not expected or inviting.. dusty yeast notes and buttery toffee beneath, but hard to get past the sourness. The flavor kept the sourness going... keeping it just barely drinkable, and not enjoyable... caramel and dried leafy bitterness surround, sour darker fruits and some warmth at the finish. Medium-bodied with a lingering unpleasant sourness at the finish. I’m thinking I got a bad one.. but unless this is really old, it shouldn’t go south like this.
