Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

Bottle shared with a bunch of folks at DougShoemaker’s Decemberfest 2006 - courtesy of DougShoemaker. Dark amber with a small head. Aroma of cherry, spice & candi sugar. Soft mouthfeel. Fairly sweet flavour, with more cherry and spice notes. A decent winter warmer.

Bottle. Dark orange-brown body with a soapy/creamy white head and lace. Dusty aroma and fruity (pear, banana) along with bread and butterscotch notes. Sour bread flavours. Reasonable.

750ml Bottle @ Decemberfest 2006: Pours copper-brown in colour, cloudy, with almost no head to speak of. The aroma was catching me off-guard as I knew I was picking something out but couldn’t place it. I finally figured it out as red licorice, which would assume some flourishes of cherry. This is a sweet, fruity smelling beer. The body is quite thin, and the alcohol is not hidden well at all, but that red licorice I smelled definitely shows itself again.

Bottle @ Doug’s. Thanks to Doug. Caramel brown. Nose is cherry, port, yeast. Flavor is sour malt, cherry oak. Bitter fruity finish.

Bottle @ Decemberfest.
Slightly hazy amber, medium smallish head.
Bit sour, sweet malts below, fruity, hints of cherry and alcohol.
Medium bodied, gentle in character. Light earthy touch, tart at edges. Fruity finish with very light meadow like hops. Good trend, but why so light at this alcohol level? Confused?

Bottle via Rastacouere. 02.06.07 date. The head began seeping out of the bottle immediately upon opening it. Deep garnet color with an ivory head. Sulfury and malty aroma. Thin caramel and malty flavor. Extremely metallic. Dusty with a tobacco note. And tingly

Beautifull dark caramel color, nice tanned thick head. Aromas of Caramel, brown sugar, a hint of cinnamon and other spices, very malty. Very nice frothy feel to it. You can taste the alcohol, caramel / butterscotch, plums (?), brown sugar (sweetness). All and all, not bad christmas ale yet far from the best.

Easy drinking and very smooth, listed as dhiver. Steel cap that is like a giant staple, relase it and it goes flying across the room. After surviving that, it is an easy drinking brown ale with roast and malt, worth sharing, 750 ml is a lot for one man. Good mouthfeel, not too much spice, Malt is the word.
