Commercial Description:
St. Sylester's Flander's Winter Ale is a rich Hearty winter ale top fermented in the classic tradition. In1918, Remy Ricour took over the old Brasserie in St. Sylestre in the heart of French Flanders. His dream was to produce authentc brews like the Trappist ales brewed at the nearby Monastery of Mont de Cats before the turn of the Century. Today, Serge Ricour, continuesthe third generation family tradition of brewing had crafted, full flavored, top fermented ales. In Flanders, it is traditional to make a hearty brew for Noel. At St. Sylvestre, hops are harvested in the fields surrounding the village. The "Malterie", 20 kM away, supplies a malt, with and appropriate Munich roast. The local hops plus the robust malt, produce a winter al with rich warm brown tones. While originally brewed only for Noel, it is now drunk throughout the winter season until the first brew of spring arrives.

Bottle shared with jerc & tupalev -- courtesy of jerc. Pours brown with a massive lasting foamy off-white head -- man that’s a huge head! Aroma of sweet malt, dark fruit, some spices, a hint of chocoate, brown sugar and a mild sourness -- not great but there’s quite a bit going on there. Flavour mostly follows the aroma but I was a little letdown by it, it’s a little bland and somewhat mediocre. Light to medium bodied. I found this just O.K.

Bottle labeled Brassin D’Hiver courtesy of Jerc, shared with him and Blankboy during my condo warming July ’06. Really foamy pour, after it settled it was hazy brown with a small white head. Sour malt aroma, muted. Taste isn’t bad - yeasty, tart, mint. Ok, hard to tell if it was a little off or just how it was supposed to be, but not as good some other beers in this style I have had.

Bottle labeled Brassin D’Hiver from Metro Joanette. Brown body pours about 9/10ths of the glass as foam as first. Sweet malt, riasins, light lactic hints in the aroma as well as muted licorice and carmelized malt, very muted notes of sour cherries. Sweet malt with a light sour tang throughout the flavour. Average palate.

750 ml bottle. Red-brown color. Clear with a little bit of yeast in suspension. A good carbonation with a nice thick head. Fruity aroma and taste. Molasse aroma but not in the taste. Nice beer.

Monster head on the mahogoney body. Aroma of raisan and plums with some caramel malts. Sweet malty flavour with a touch of dark fruits pushing in. Quite a lot of carbonation. Finishes sweet and fruity.

Bright reddish-brown colour. Caramelly, slightly earthy malt aroma with light background yeast. Quite spritzy. Once you get past the carbo, it’s got some interesting malt complexity. There’s a bit of tartness late.

750 ml bottle, best before Feb 2007, from Metro Joanette in Verdun, Quebec (May 2006), served at cellar termperature in a Dieu du Ciel! tulip. A big pop when the cork is extracted and a huge off-white frothy foam settles into the glass, decaying quite slowly with nice thick lacing atop the murky dark caramel body.....grainy and mineralic/metallic (chalk/iron) aromas are barely softened by faint caramel....grapy, rather sourish body at first bears more resemblance to a Flemish sour ale but a sweet brown sugar character and bitter, pungent earthiness soon arrive....finish is dry, somewhat thin despite the fairly strong maltiness in midpalate....strong, vibrant carbonation. Not bad, but definitely my least favorite so far from this fine brewery.

Nutty brown with fine white lasting head. Sweet aroma of caramel and nuts. (Same aroma as westmalle dubbel) Lively carbonation. The texture is filling. A little sweetness from dark fruits and malts and then a slight bitter finish. (Not as sweet as the average Belgium Kerst, Great! )
