Estery nose, with spice, pepsin, tiny clove, good chocolate, and some dark fruitiness. Flavor is initially spicy, some chocolate, a touch roasty, a touch of anise and clove. Almost refreshing in a strange way. Will be interesting to see how this ages. It could become a fantastic, complex litlle beast, or it could become thin and annoying. Aroma of tomatoes and carrots. What the heck, I think, it can’t be that. I wrap my hands around the snifter and practically drown my nose in the brew trying to find some other stand out aromas, but no, I keep getting a weird vegetal thing, weirdly out of place Belgian-like yeasts that really miss the mark for me, then a dose of clove, I don’t know what to make of it before I even take a sip. The flavor is almost reminiscent of Chimay Red, but theres a wacky hop note (something c-hoppish) that bitch-slaps any hint of sweet Chimay Red goodness down to its knees. Melon mixed with citrus pith on finish choke out the best efforts of some sweet Belgian earthy, choco, raisin love that tries so damned hard to sneak its head in the door. Aroma of cocoa, dark candy sugar, and banana notes. Long dark malty flavor with an unexpected twangy astringency as if from burnt sugar. Has a tannic, peanut skin quality to it. Medium acidity with substantial, lingering bitterness. Mouthfeel is like a decent medium-full strong Belgian ale. Not a great Stone beer and it still won’t be in 7 years, 7 months, and 7 days. Rich ruby/brown in color with a tiny half dollar thick tan head. Fore is caramel malts and cocoa with hints of raisin and spice. Having just had the 03 03 03 the other day I can say, as others have mentioned, this is thin. At the least is much thinner than the 03. Lacks that incredible spicy flourish of the 03 as well. But this does have a very nice basic flavor. Comes off as cocoa infused caramel pumpernickel bread with just a very slight hint of spiciness in the finish. Silphium (2139), Haslett, Michigan, USA

Caramely, toasty aroma, with hints of brown sugar. Alcohol and bitter esters begin the flavor profile, with notes of caramel and toast that linger with the strong esters, which carry through the flavor profile. Toffee and chocolate are also evident. I’d like to pick up a few bottles to put away for a few years to see if it gets any better. Very nice.
