APPEARANCE: Dark brown to black with a tan head. AROMA: Fruity, phenolic yeast notes with dark malt roastiness. FLAVOR: Clove, smooth roasted malt, mild spiciness, and some hop bitterness. A dry finish with apparent alcohol. PALATE: Medium to full-bodied, good carbonation…no astringency. OVERALL: Very full and complex…not sure how it will develop.

The flavor here seems the best of the epics yet. The yeast is better incorporated with the alchohol and I think this is a bit sweeter. Nutty and bready, not as much perfume.

Bomber. Poured rich cola brown with a good lookin’ cap of tan head. The aroma picked up toasted molasses, toffee, and darker fruit topped by a dry, peppery yeast driven by alcohol warmth.. quite inviting. The flavor was centered around the molasses and dark fruit from the nose.. cocoa and a touch of charred smoke eminated outward.. dusty banana-like influence from the yeast on the edges.. finished warm, again with the molasses and fruit playing against the yeast. Medium-plus bodied and well-balanced on the palate.. spicy and engaging with very complementary yeast. Good stuff!

Brown pour. Raisins, honey, spice, caramel and some yeast. Not much hops here. Flavor is ok, but I think time has already started this one down hill a bit...still its pretty good.

Now I didn’t have this fresh but I would say it is has aged beautifully. Dark rich pour with a small head and some lacing on the glass. Aroma has dark chocolate, some roasted grains and coffee with a bit of dark fruit and cream. Flavor is similar. Has some fruit and creamy chocolate and finished smooth and clean. Balanced and delicious. Maybe I just love old beer.

First of two bottles from the cellar, Dec ’09. Gotta say I don’t think this one is going to make it to 12/12/12. It’s already on the way out, if you ask me. Sweet, dark malty belgian style, hop presence almost completely gone, somewhat hot for sub 9%. Not really very dubbel-like; this one seems much more like a Belgian strong, maybe a christmas beer. Starting to thin, some cardboard coming in, simply not in league of good dubbels or good belgian strongs. People are charging 45 dollars a bottle for this? Damn. You can have my second bottle in exchange for an equal volume of any trappist you like!

22oz bottle. Rating #460. Very deep dark red bordering on black. Light tan head with decent retention. Sweet candy like aroma, slightly roasty and some dark fruitiness as well. Flavor was very sweet, candy sugar sweetness, but I did like it though, it was almost like rock candy, this was very tasty after 3 years. (1087)

Had this one on tap at the Blind Tiger VSK event. Great beer! Nice sweet malts with some tartness.

On tap at the Blind Tiger’s VSK3 event. Pours a clear black with a thin white head. Smoke, coffee, roast. Creamy with some good roast flavors, a hint of coffee, and some nice chocolate. Finishes up with some lingering raisin, plum, and a tart roast note.

I guess I scored as it was only $9 at Charlie Jewels. Smelled of roasted malts and tasted of Belgain yeast and chocolate, as well as anise.
