Commercial Description:
In this year's edition we took our inspiration from two Belgian styles: Saisons and Golden Triples. As such, the Stone 07.07.07 Vertical Epic has a deep, deep golden hue and the flavor is spicy, fruity, complex and refreshing. We used four different malts, and a subtle, yet distinct, blend of Glacier and Crystal hops to get just the right balance. Then, for the complexity, we added in some exotic spices --- including ginger, cardamom, grapefruit peel, lemon peel and orange peel (the latter three acknowledging our Southern California home) --- and a special Belgian yeast strain. All in all this is yet another case of us drawing from classic Belgian influences and cavalierly making it our own...San Diego style!

poured into tulip. pours a very crisp clear gold with moderate head. very sweet yeast bannana aroma with spicy backgrounds. smooth crisp, slightly bitter with pumpkin in the background with spices. complex in many ways will be interesting in five years, the nose is intense spiceness and unique, not too hot, and mild in taste for alchohol for its ABV and that it is meant to sit for 5 years.

22oz bottle. Aroma: Very spicy. Cloves, cardamom, potpourri floral, ginger, and orange peel. Lots of fruitiness with notes of apples, grapes, and banana. Appearance: Orange/amber in color and clear. Off-white head was full and creamy with good retention. Good lacing. Flavor: In your face spiciness. Ginger, cardamom, clove. Lots of floral and citrus. Banana and bubblegum. Apple, grape, and orange. Finishes sweet. Palate: Medium bodied. Medium carbonation. Overall: Sweet and spicy. I liked it, but I can see why this isn’t for everyone.

Strong ginger, cardamon, citrus aromas. Almost burns the nostrils. Golden amber color with a beige head that actually lasts awhile. Medium bodied with creamy carbonation. The first impression is ginger. The second impression is ginger. Thinking about this, there is some pale or caramel hop flavor. There’s even some hop bitter. However, the ginger is helping clear the sinus. Reminds of Blandford Fly.

Tried this on tap at the brewery. It is interesting. It definitely needs some time to mature. There is an acidic fruit taste mashed together with hops for another bite. It mellows out on the pallate but I thought it would be better, I guess I’ll just have to wait a couple more years to try it again.

Mostly translucent and goldenrod in color with a white, filmy coated head breaking like ice from a scene of an Al Gore documentary. Aroma is filled with bananas, pears, candied apples and ginger root. Cardamom and coriander like spicing give a sweet, vanilla-esque and husky side to the scents wafting up. A hint of floral filled mums flaps in the distance. Flavor produces a lemon rind flavor with buttery sourdough, and then gets rubbed down with vanilla tootsie rolls to emit a waxy feeling on the roof of the mouth. Gently honeyed milk sings with a mild citric brightness hiding at the hinge of the tongue. Pears intersect with a lemon crème and banana meringue character. Bright carbonation joins with an active, jovial mouthfeel, finishing with hints of pineapple, coconut and evaporated milk amidst an orange blossom citric brightness.

Bottle. Pour is a coppery amber color with a pretty nice frothy head that sits about two fingers high. Aromas are fairly subtle. Smells like honey, ginger, and some citrus. Flavor is extremely sweet up front... candi sugar, caramel, sugar cane, etc. (maybe I’m exaggerating a little, but it’s way sweeter than I expected.) Flavor then yields to a citrus peel and spice finish... which is then capped off with an alcoholic burn and astringent flavor. It will be really interesting to see how this one ages and if it blends out some of the rough transitions and unseemly qualities.
