Soft, lively & warm mouthfeel dominated by alcohol, spices, yeast & fruits. True sipper. A bit heavy - but very Complex. This has matured well. Very well. Aroma of sweet pale light caramel malt and bready biscuity yeast with light floral hops and good complexity. A dense, clouded yellow opaque pour dutifully supports a tall, rocky, creamy white head with awesome retention. I can sense yeast from afar, so I draw the glass slowly to my nose. The closer it gets, the more sweet fruit and elegant yeast surround the space around me. Prominently featured are ornage pith, gingerbread, doughy and almost berry-like yeast esters, fresh sunbaked grain, grassy noble hops, honey, phenols, pear soda. The most interesting part of the aroma is the way each little nuance makes itself momentarily available, peeking out from under the guise of sweet malt and copious yeast, then quickly dissapearing again. In its entirety the nose has a country, lemony feel to it. The flavor is very spicy, full of vibrancy and very good. Spice counteracts pungency of yeast and levels the playing field. Bitterness is mild but steadt and grows with each sip. Sweetness is medium , steady, never cloying at all. Acidity is lemony and everpresent and cuts through waves of malt. Yeastiness is ancient in taste, a resounding cry to tradition and caring brewing; it’s very heavy but lends so much to the character of this beer. This tastes great. The finish is sweet and spicy, eventually drying and only now showing signs of alcoholic warmth. Dryness eventually follows and results in a clean, crisp spice bite to seal the deal. The mouthfell is medium-full, very well balanced and exceptionally well and lightly carbonated. Another awesome beer, no surprise, from one kick ass brewer.
