Commercial Description:
Starting with a Lambic grist bill composed of 70% barley malt and 30% unmalted wheat. No yeast was artificially added to the wort, but was exposed for two days to the open air in one of our plastic tunnels at the Noordhoek Ostrich Farm. First fermentation took place in second hand sherry oak casks for six weeks. 200 grams of Northern cherries per litre and the Roeseleire yeast strain were added after six months, provoking a new fermentation process. Eight months later, we pumped over the young ale to oak casks and let it mature for another 3 years. This project was realized after a tasting of the same recipe Urbain once made 20 years ago and was barrel aging in his garage in De Panne eversince and while he was in Africa and forgot all about it. As this is a very limited version, this ale will not be suitable for export but rather for sale at the farm when available.

Tap @ Borefts Beer Festival 2009. Hazy ruby red colour, off-white head. Aroma is sour cherry, horseblanket, oak. Flavour of sour cherry, tart, yeasty and redberries.Very smooth and balanced. Very enjoyable.

Tap @ 1st BBF, De Molen.
Pours a lovely hazy red with a big, creamy, off-white head. Impressive lacings. Aroma has tart cherries, oak, herbs, red wine and a bit of marzipan. A touch of cellar. Medium carbonation, nice creamy mouthfeel. Flavour is soft, tart, cherries, sweet malts, oak, dry, bretty, lemony and a touch of stayin lactic acid. Really nice, but an average rating beyond 4.4? Well...

Draught at 1st Borefts Beer Festival at De Molen. Hazy orange red coloured with a lacing off white head. Light acidic aroma of red wine with notes of caramel, vinegar and lactic acid. Fruity and light acidic flavour of vinegar and caramel with notes of red wine, oak, vanilla and berries. Tart finish. Well balanced acidity.

Had this at the Borefts Beer Festival, De Molen Brewery, Bodegraven, Netherlands 30-10-09 Pours reddish in colour with a white filmy head and quite stunning sour fruity aroma, also some wood there as well. I get some fresh berries and the tastes is so funky and sour quite a wonderful contrast to the Imperial Stouts I’d been having over at the other venue. I also get that Cremola soda soft drink that you has as a kid, fruitiness is great, lovely, lovely stuff. A9 A4 F8 P4 Ov17 4.2

Tap @ BBF. Hazy pink color, medium head. Aroma is very fruity, barnyard, tart, bit wood. Perfectly balanced sourness, soft fruity, hint of sweetness. Awesome sour ale.

Tap at BBF. Ruby body with large head. Totally not my style but have to give respect to this beer. Fruit and sour nose. Taste is also quite sour but sweet. Refined and went down well.

Tasted at 1st Borefts Bier Festival, Bodegraven. Hazy ruby coloured, big head. Fruity notes all over the place, sourness and wood as well. Flavour is sour and sweet, not as harsh as a lambic, but stil pretty complex. Very nice beer.

On tap at Borefts Bier Festival, De Molen. Hazy orange amber colour, dense off white head. Aroma is fruity, sour, musty, some wood. Flavour is sweet, fruity, light funky and a good deal of sourness. Medium bodied. Not my cup of beer, but nice nevertheless. Just a bit too sweet for a good sour ale imo.
