Commercial Description:
Starting with a Lambic grist bill composed of 70% barley malt and 30% unmalted wheat. No yeast was artificially added to the wort, but was exposed for two days to the open air in one of our plastic tunnels at the Noordhoek Ostrich Farm. First fermentation took place in second hand sherry oak casks for six weeks. 200 grams of Northern cherries per litre and the Roeseleire yeast strain were added after six months, provoking a new fermentation process. Eight months later, we pumped over the young ale to oak casks and let it mature for another 3 years. This project was realized after a tasting of the same recipe Urbain once made 20 years ago and was barrel aging in his garage in De Panne eversince and while he was in Africa and forgot all about it. As this is a very limited version, this ale will not be suitable for export but rather for sale at the farm when available.

Bottle@LCRBM08. Wow! I think that says it all. Amazing beer with an unbelievable balance between sweet, sour, cherry and oak.

4th Annual Belgian Fest at Ebenezers. One great Lambic Fruit that has a very intense aroma, surpassing all of my favorites in the Sour style, and having a very cherry and sour taste and then again reminding me of how well it exceeds the very best. Overall it surpassed my expectations with a loveable taste and complexity. 20+ (maybe 30) year version sampled.

When a gang from Monks Cafe were down at the Struise farm for brewing a new beer, Urbain brought forward 2 different Dirty Horse beers in decanters. The 20 year old was a litle clowdy but had a marvelous smell of sour ale combined with stable and wet earht. The tast is sour but not as dry as a gueze and have a more complex maltiness. The taste lasts long and is supurb.

Noordhoek Farm- Lightly Carbonated with a soft, effervescent scent. Loads of Sour, dank, musty cherries, that evolves to an earthy, mushroomy, slightly barnyard aftertaste. Zinfadel like jaminess, with a slight pepperness hidden in each small sip. This beer constantly evolves with each miunte it is in the glass.

Noordhoek Farm Lo-Reninge. Thanks Philippe for letting me taste this very rare Struise Sour Ale. Cloudy orange ale with small white head. The head is not to long lasting but the beer has a very nice slight fizzy caracter. aroma is is not as dry a a gueze and not so sweet as a faro. Dirty Horse has a superb smell, lots of thing happens with the aroma, its like constantly changing. Malts, lemongras, sour fruits, but also wood, wet earth, leather, wax and horse saddle. Taste is very equal to the aroma, just think some old hops and wood with it and you will be close. what a delicious beer. Thanks Phil for your time and letting me taste this fantastic beer.

At the Struise Farm in LO. Friday the 13th, well it looked more like my Lucky Day ! Served in a Sluuswachter glass. Stange color, it is golden orange-red with a slight hazy caracter. Aroma is Mega complex and very well balanced. Horse blanket in the nose, wood, musty apple, sour cherries, earthyness mels like Old and wize. taste is great and full of elegance. Sourmalty with musty sour apples, dry biscuits, sheepsbarn aroma, goatscheese, tart cherries and death leafs. Carlo and Urbain Thanks !!!
