Brown sugar, toasted vanilla, spicy yeast, raisins, figs with just a touch of wet oak on the nose. I actually get more grape brandy notes than calvados. Some fairly intense fusel alcohol as the beer warms. Pours a dark, muddy brown with some bright copper around the edges. Creamy palate. Good carbonation. Green apple skin and brown sugar initially on the tongue. Slightly ashy. Charred caramel. Some alcohol soaked plums. A slight copper note as well. Aroma is rich and lively with lots of green apple, maple french toast, vanilla, agave, mango skins, and field greens. Flavor seems slightly oxidized with tastes of cardboard rimmed with honey and maple. Crisp tastes of pear and apple skins with a hollow undertone of high alcohol cider. Dry spices and white grapes. Doughy and sugary like full bodied rum. Banana and extraneous creamy sweetness powers through in the finish. Palate is lightly prickly but very soft. Aroma of sweet malts (caramel), fruits (apple, peach), liquor and wood. Nice complexity in the aroma, but not overwhelming. Moderately bitter, moderately sweet flavour of hops, malts (caramel), cane sugar, ... Nice well balanced flavour with some complexity. Deep walnut pour with a bunch of silky-fine tan foam, good substance to it, sticky lacy bits and a lingering layer. Aroma that changes every time I put my nose in the glass. First sniff, with the beer still settling, was sort of a rancid butter thing. That happily dissipates almost immediately; then it’s lovely aged Christmas pud, on to big sweet cherries soaked in brandy, raw chocolate, all in a background of well-oiled mahogany. Flavor is some kind of magical raw muscovado sugar, with the lovely subtle sour notes mixed with chocolate, rum, vapory dark fruit. But unlike eating sugar, where a spoonful overwhelms you with sweetness, this has a soft dry finish with just the lightest sweet touch and a nice lingering plum sourness. This comes together beautifully.
