Commercial Description:
It's nice to be able to finally brew some beer without restrictions on it. we came from Colorado where we could brew or try anything. We've been waiting 7 years to make a stout and we harnessed all that frustration into this batch of beer.

We didn't get caught up in the parameters of a specific style we just brewed a big fat hoppy beautiful beer. The timing of the law change couldn't have been better for us, because it has taken until this summer for us to get set up in our new brewery. We finally have some capacity to experiment with some new style. This could lead into a seasonal offering from us in the future. For now we're just glad we can satisfy the demands of the folks who have been on us since day 1 to make a stout.

Malt: 70/80 crystal malt, chocolate malt, black malt, roasted malt

Hops: Centennial, Willamette and cascade - on the dry hop!

Bottle pours black with slight brown head. Aroma is slight coffee. Clean sweet coffee taste with nice sweet finish. Didn’t have a strong hops finish but with the strong sweet stout flavor I didn’t expect. Good stout.

Bottle thanks to TheBeerCellar. Pours a dark brown with decent head that falls quick. Nose of heavy roast anc chocolate. Flavor is rich with toasted malt and chocolate. Also a hint of dried fruit backs up the chocolate. Nice full body creamy texture.

20070303 12oz bottle. Back to back big, burnt, roasty, assertive imperial stouts. That’s the way to end a night of note-taking! Very bitter with heaps of citrus and floral hops. Good stuff.

12 oz. bottle courtesy of a trade with TheBeerCellar. Pours a dense black with a moderately thin brown head that lasted through mid-glass and left a sheet of lace with each sip. Very nice aroma of chocolate, lightly roasted malt, raisins, and some floral hops. The flavor is very nice too, but is more dominated by some stronger roasted malt. There is some short-lived dry hops bitterness at the finish. As the beer warms, the alcohol becomes more noticeable towards the finish as well. Full bodied. Good stuff, thank you Matt!

Bottle courtesy of jrob_21 -- thanks! Apparently this won a silver medal in the "American-style Imperial Stout" category in the World Beer Cup results announced today, so that seemed as good an excuse as any to crack it open.

Pours the expected opaque black with a modest brown head. Very nice roasty aroma, plenty of chocolate, fruit, a bit of coffee, just a touch boozy. The flavor comes close but doesn’t quite match up. Nice dark-roast coffee tones, plenty of sweetness to balance (without the big molasses blast of e.g. The Abyss; I confess I miss that somewhat.) Strong hop bite, keeps the long end of the finish very dry - almost metallic - after a somewhat sour twist on the short side. Unfortunately, the mouthfeel is something of a letdown. It’s thin, and leaves me wanting something with more substance. This one is a perfectly enjoyable beer, but against some of the giants in this style category, it really can’t hold up. And I must say I can’t figure how it pulled that gold medal.
