Commercial Description:
It's nice to be able to finally brew some beer without restrictions on it. we came from Colorado where we could brew or try anything. We've been waiting 7 years to make a stout and we harnessed all that frustration into this batch of beer.

We didn't get caught up in the parameters of a specific style we just brewed a big fat hoppy beautiful beer. The timing of the law change couldn't have been better for us, because it has taken until this summer for us to get set up in our new brewery. We finally have some capacity to experiment with some new style. This could lead into a seasonal offering from us in the future. For now we're just glad we can satisfy the demands of the folks who have been on us since day 1 to make a stout.

Malt: 70/80 crystal malt, chocolate malt, black malt, roasted malt

Hops: Centennial, Willamette and cascade - on the dry hop!

12 oz. bottle. Pours black in color with a mostly lasting foamy tan head that leaves decent lacing. The aroma is much hoppier than most Imperial stouts. I get citrus and grassy hops with some chocolate and roasted malt. The flavor is also extremely hoppy for an Imperial Stout. It has the roasted malt character with a hint of coffee as well. This one is also a little thin for an Impy. The alcohol, however, is well hidden mainly by the hops. I am having a discussion in my own head on how to rate this. As an Imperial stout I think it is lacking in a few things I would expect in this style. As an extremely dark IIPA this is pretty good.

Opaque with a espresso head. Aroma is roasty with raspberries, espresso. Taste is caramel, light hoppiness, chocolate, light mocha. Pretty goo, havnt been big on I.S.’ lately but this is pretty good. Thanks Dad.

Pours a dark black, nice appearance. Not a very good consistency. The head was thin, light tan. The aroma was sweet, woody, roasted, molasses, slight sodium aroma. The flavor is not up to par with the nose, has a harsh roastiness, a tad of alcohol. Cool in the mouth and a little thin, definitely enjoyable.

The color was very dark chocoalte/black. The head was creamy, medium tan, frothy, and laced a little. The aroma was soy sauce, vanilla, roasty, and coffee. The flavor roasty, coffee, flowery, soy sauce, and chocolate. The palate was very smooth and thick-bodied. The finish was warm.

Best by 06/12/2007. The beer pours to a black body with a dense creamy dark brown head. Nice lacing. The aroma is chocolate, anise, and citrus hops. The flavor is chocolate malts and lots of grassy and citrus hops. The palate is moderately bodied with a dry roasty feel.

2009 bottle. This is one hopped up Imperial Stout - although could be a black IPA like Stone’s 11th Anniv. Pours a medium black with a bit of tan head. wonderful pine and citrus hopped up aroma... this is the most hoppy "stout" I’ve had to date. thin to medium body with a nice bitter front with some coffee and chocolate coming through quite well. shallow on the bottom. very nice bitter finish lasting as long as a hopped up IPA ... Sweetwater has something special here.... it really deviates from the normal Imperial Stout which carries a heavy body with thick malts undertones. This one smacks you and does leave you with a smile on your face.

Bottle. This one traveled from Georgia to Virginia then from Virginia to CA (thanks alexanderj). Aroma of roasted chocolate malt and some coffee. Flavor is similar with some sweeter chocolate, but a little light on the palate. Some hops in the finish.

12 oz. bottle. Pours black with a small tan head. Aroma of chocalate mixed with piney hops. Goes down smooth with hints of roasted coffee. Hops hit you at the end and linger, but in a good way!
