Commercial Description:
It's nice to be able to finally brew some beer without restrictions on it. we came from Colorado where we could brew or try anything. We've been waiting 7 years to make a stout and we harnessed all that frustration into this batch of beer.

We didn't get caught up in the parameters of a specific style we just brewed a big fat hoppy beautiful beer. The timing of the law change couldn't have been better for us, because it has taken until this summer for us to get set up in our new brewery. We finally have some capacity to experiment with some new style. This could lead into a seasonal offering from us in the future. For now we're just glad we can satisfy the demands of the folks who have been on us since day 1 to make a stout.

Malt: 70/80 crystal malt, chocolate malt, black malt, roasted malt

Hops: Centennial, Willamette and cascade - on the dry hop!

My Bottom Line:
Fruity molasses and roasted malt curves veer into a lengthy grassy and resinous bitterness for an intense, boozy Imperial Stout experience.

Further Personal Perceptions:
-A veil of foam tops the brownish blackness.
-The mouthfeel is almost flaccid (carbonation is quite low), making the dextrins appear too important in the flavor profile.
-Roasted malts accompany the potent hopping in the bitterness department, but the hops still dominate that part of the brew.
-Light citrusy protrusions add complexity.

Bottle; 2009 vintage.

Bottle 12fl.oz. @ home.
[ Trade by GAManiac ]. Clear medium to dark black color with a large, frothy to creamy, good lacing, mostly lasting, light brown head. Aroma is light heavy malty, roasted, licorice, moderate to heavy hoppy, grass. Flavor is light heavy sweet and bitter with a long long duration, english licorice. Body is medium, texture is oily and creamy, carbonation is soft. [20090816]

12 oz bottle, 2006 vintage. Pours dark brown with very little->no head. Sweet and sour aroma - molasses, roasted malt and lots of lactic acid and some stale off notes. Flavor is better balanced, still sweet, but not as sour, with soft cocoa notes, molasses, piney hops and a slightly dry finish. Medium-full bodied and smooth with low-moderate carbonation. Good, but kind of one-dimensional imperial stout - not as complex as I’d expect especially with age.

Flavor is roasted and malty with notes of floral hops, chocolate, caramel, light coffee and toasted bread notes. Medium to full body with a pleasing roasted malt finish.

12oz bottle. cellared for over a year and a half....decent pour renders mostly black with brown edges and a quickly dissipating light beige head.... aroma hugely on soy and oxidized notes... flavors of soy chocolate and a little lactic sourness which was somewhat unexpected. medium carbonation and thin mouthfeel. not very good i’m afraid.
