Sep 16, 2008 Deep gold body with a lightly off white head. The massive aroma was sweet with ginger and leather. There was also some nice caramel. The taste was sweet caramel apples with some strogn ginger and cinnamon coming through in the finish. Solid.

Dec 26, 2006 Very large offwhite head of fine bubbles. Very dense and creamy on top. Zesty orange, spices and yeast in the aroma. Nice meld of aromas for this triple. Very good carbonation. Reduces to a thick sticky sheet of lacing. Color is a slightly cloudy golden orange. Lightly sweet and malty. More orange zest and spices. Quite the good balance and very tasty. Little alcohol warming. Finish is clean with a little lingering sweetnes. I am enjoying this brew quite a lot!

Jan 14, 2005 Sampled at Stuffed Sandwich in San Gabriel, Califonria. Pale yellow with a gigantic head of white foam. Appealing nose of light fruits (pears and apples), bubble gum, spice and yeast. Airy, light and timid body. Big bubble gum flavors with hints of papaya, pear, apples, hops and yeast. I really like Ij and their beers.

Jul 5, 2006 Notches marked March/05. Born or best? Hazy gold with a few floaters, topped by a frothy, 1 inch white cap. Aroma of old grains similar to a very light whiskey with a few ice cubes melted in it. Sweet fruits, mildly sour funky yeast, vinegar, also. Flavors are sweet and fruity, rich yet crisp malt, a subtle herbal/pepper spiciness, tangy vinegar, just a bit of musty funk, and a dry yeasty finish that makes me want to drink it way too fast. Very mellow. Full, smooth palate. Solid brew, have to try some of their others.

Jan 14, 2008 2nd Brewery 07-08 Beer Road Trip with Bikesandbeer, 12/31/07 @ The Brewery with Alan Sprints. Alan was nice enough to give Kevin, Kevin’s Girlfriend Jessi a private tour and tasting on New Year’s Eve 07. Bottle form Alan’s Personal Cellar after Kevin was talking about living in the Netherlands Alan went around back and rooted out a 1996 vintage of this brew and damn it was tastey. Pours yellow bubbly with a 1 finger bubbly head. Nose had a huge yeast character. Taste was alsmost Greg like sweet, yeasty, light and all in all a damn fine Tripel.

Aug 5, 2007 Pours a deep murky yellow-gold with 1.5 inches of white head and opaque speckled sediment on the glass. Enticing lace. Smells of spiced pie, mandarin oranges, and barnyard sour yeast. Tastes are reminiscent of Fantome with barnyard Brettanomyces, coriander, creamy rice goulash, and dark green herbs. Zesty spice finish follows the slightly acidic sour-apple finish. Medium-full carbonation and lighter body for a tripel. Still, good.
