Commercial Description:
Brewed with Barley malt, wheat malt, vienna malt, and caramalt; Hallertauer, and Kent Goldings hops; Dark candy sugar, and White candy sugar; and Coriander, and Grain de Paradise. Finally it is aged in E.Dupont calvados cask 6 months.
Primary Fermentation: 2 Weeks
Secondary Fermentation in Bottle: Champagne yeast, port yeast and ale yeast

Ale pours cloudy; dirty brown with well retained off white head. Aromas of wet wood, alcohol and figs. Flaovrs include sweet malt, candy sugar, dark fruit, and an oppressively hop alcohol presence. Good, but needs to age to subdue the alchohol.

Dull, muddy brown, little carbonation, no head. Aroma is nicely complex - vanilla, oak, brown sugar, toffee, and dark fruits. Flavor is sweet and woody with vanilla and caramel. Definite alcohol presense comes through as cognac notes.. Smooth, substantial mouthfeel.

Thick, rich aroma - full of figs, cherries and plums. Sweet and woody. Dark, muddy body..not that beautiful. Somthing like maple syrup in the flavor is odd, as are banana esters. Spicy, and full - very complex overall. The finish is too bitter, and the alcohol is a little overbearing - maybe it is the added sweetness needed to make this so high ABV.

Hazy dark red pour - quite foamy - big calvados aroma, with some port, overripe fruit, brown sugar - lots of calvados in the taste as well - some apples and pears, darker fruit esters - slight, lingering port character on the back end - a little tartness - something odd in the finish tastes like...celery? - otherwise a good beer.

Definitely a bit hazy, amber colored brew. Complex aromas or sherry and a cidery apple quality (lactic acid and some aldehydes maybe?). Complex, vinous, taste of multiple dried fruits with a slightly sourish finish. Full-bodied. Not quite, but approaching, chewy. Very tasty beer and quite enjoyable. One of my favorites of 2005.

Bottle shared with HogTownHarry - courtesy of him. Hazy ruby-brown with a wispy head. Aroma is a bit funky, with contrasting notes of tart red wine and sweet brown sugar. Flavour is warm and sweet - malty, spicey, some caramel in the middle, hint of alcohol to finish. Very pleasant winter warmer.

Bottle 2003 vintage poured a cloudy dark copper with no head. Aromas of apple cider, spices, and some molasses. Palate was light bodied and slightly syrupy. Flavors of apples, brown sugar, spices, and carmel with a warming, lingering sweet finish.

Bottle (330ml). Shared with GregClow, my bottle. Poured cloudy deep brown with a smallish rocky-foamy tan head. Aroma of brown sugar sweet caramel malt, yeasty with mild Christmasy spices, some rum or port and light hop bitterness - tastes pretty much as it smells. Mouthfeel is syupy and sweet - pretty nice standard sweet and spicy belgian ale.
