Commercial Description:
Brewed with Barley malt, wheat malt, vienna malt, and caramalt; Hallertauer, and Kent Goldings hops; Dark candy sugar, and White candy sugar; and Coriander, and Grain de Paradise. Finally it is aged in E.Dupont calvados cask 6 months.
Primary Fermentation: 2 Weeks
Secondary Fermentation in Bottle: Champagne yeast, port yeast and ale yeast

Wow, first thought: a Belgian brewer doing an English style- but the flavor shut me up. Pours murky brown with a slightly off-white head. Nose is booze, apple, honey, wood, spice, sugary sweetness, fruit and goodness. Flavor is the same with enjoyable fruit pieces.

Pours red/brown, murky. Nose is raisin, plum, dark fruits, sweet malt, booze. Flavor is warming alcohol, ripe fruits, pungent candy sugar, sweet malts, mild spices with hints of wood. Finishes dry.

Bottle: Aroma of dark ripe fruits, slight hops, light yeast, and coriander. Poured amber in color with a large, off-white/khaki, head that lasted throughout. Clear. Very, very sparkling. Complex, lightly sweet flavor. Tastes of smoke, smoked meat, slight dark ripe fruits, slight alcohol, slight wood, slight vanilla, light caramel, hops, yeast, light malts, slight oak, slight sherry, light grains, slight pancake, and slight maple. Medium to full body. Tingly, slightly dry texture. Lively carbonation. Slightly sweet, slightly smokey, slight caramel, and oak finish. Over carbonated. 12%ABV is very well hidden.

Botte. 11.2 oz. Pours amber with a mighty, frothy off-white head. Aroma of sweet malts, raisins, and a slight hint of chocolate. Full body with a heavy, powerful finish. Decent Belgian.

Bottle at PIB. Poured out a medium brown with a thin white head. Aroma and flavor of raisin and fig with some booziness present as well. Medium mouthfeel, average barleywine.

Pours dark brown with a thin white head. Smells of fruit, cherries, cognac, dry, oaky. Tastes of sweet molasses, dark fruit, some bitter hints on the finish. Decent.

Bottle. Total lack of carbonation is the first thing I notice. No hiss when the cap is taken off, no fizzy sounds during pour. This is a little disturbing, but I’m pressing on... Body is a slightly hazy brown. Aromas of brown sugar and other sweet and sugary stuff with a little bit of dates figs in terms of fruit. Flavor and mouthfeel are OK, but I was expecting quite a bit more. Water mixed with brown sugar would probably be just as good... especially if you threw in some port or something to give it some bite.
