Very pale yellow, quite high condition, foamy white head soon goes. Unusual lightly sour and lactic aroma with farmyard and tar/paint notes, light and fizzy almost cidery palate with a creamy quality, a lightly citric but not sour finish w hints of elderflower and kvass. Very refreshing but unusual and hard to rate. According to programme, brewed at behest of a linguist and an archaeologist, based on 4,000-year-old recipe and contains no hops. Lightly hazy, whitish-yellow color, thin filmy head. Sweetish, lemony nose, also floral and herbal notes. The initial, light sweetness goes mildly tart and lemony, again with that floral-herbal backdrop. Light acidity. Tart finish with a grainy aftertaste. Lots of greenery in there, but still quenching. Lemony, citrussy, very refreshing nose, outstandingly inviting, fruity and lactic. Again citrussy, slightly lactic, with a delicate grain background flavour. Slightly sweeter than the first experimental versions. Appropriately light. The next best thing to (real) Berliner Weisse.
