I smell straw, perfume, pepper, lime, pineapple. This beer is something. Acidity is present but well hidden by it supperb spice bouquet. Rustic lemon meringue aromas swirl on undercurrents of funked ginger pears and peppery apricots throughout. Well balanced with textured fruity peppered rye-like tones and hints of yeast over a light dry hoppy funked finish. Medium to full bodied with zesty carbonation. Nice aromatic combonation of spice and pale malts, along with a hint of funky brett. The spice note takes on a decidedly rye-like quality in the mouth, along with elements of orchard fruit and yeast. Drying in the mouth, but still medium bodied. A bit heavy in the mouth still, but we probably drank it a bit too young for the brett to really work it’s magic. Very funky and sour with a hint of vomit afterwords. Flavor is dry and sour with a lot of earthy notes and some light sweetness. Very balanced. The aroma has lots of yeasty funk and some earthiness, light pepper and lots of spicy saison traits. Medium crisp body with a nice amount of semi-sharp carbonation. Pours a super hazy caramel color with prodigious amount of frothy whipped cream consistency foam. Aromas are Belgian candi sugar, Belgian yeast phenols, spices, and leather. Taste is less dry than expected. Still quite spicy. Shares a lot of characteristics with the Orchard White. Touch of Rye that comes off oddly with the choice of yeast...don’t know how to describe, but not altogether pleasant. Overall interesting beer. Definitely glad that I gave it the time in the bottle to calm down, though I think it could have easily taken another 10 months or more to get to its prime.
