I tend to favor local beers whenever I get the chance; TC definitely qualifies as a local brewery for me. Of the three I sampled (Amber, Doppelbock, and Pilsner) at dinner, the Doppel (excuse me, DOPPLE)bock was my favorite. It served as a stand-alone dessert after a great meal, but would pair nicely with good chocolate and ice cream, for certain. It would also be a winner with anything blackened (catfish, even). Not too sweet, not too bitter, a good balance. Definite coffee notes abouind. A nice, oily finish stands out in my memory. RVABeerstro (13), USA

Aroma of sweet malt, chocolate, roasted malt, sweet coffee. Flavor is huge roasted and chocolate malt with a rich, creamy mouthfeel. Very robust flavor with a long, coffee, nut and roasty finish. Pours deep brown with a bit of a reddish hue, capped with a big tan head. Cocoa is the dominant aroma, along with caramel and nut, with a bit of vanilla. Chocolate is the initial flavor to hit the palate, and is nicely complimented by molasses, pine, plum and brown sugar. Finishes a bit sweet, with a hint of smoke. It was my favorite of the evening, actually. Flavor was rich, roasted nuts, carmalized sugar, and some milk chocolate. Easily drinkable. I loved it!
