Commercial Description:
The doppelbock style of lager came into being in Middle Ages era Bavaria in what is today southern Germany. It was originally brewed by monks to provide themselves with a liquid form of nutrition during the fasting period of Lent when no solid food was allowed. This has earned the doppelbock the nickname "liquid bread" because of its rich and filling capacity. The Thomas Hooker Doppelbock Lager blends huge amounts of imported Munich, Vienna and Moravian malts with select dark roasted malts to achieve a malt lover's dream of a rich and creamy brew. Subtly hopped with noble German and Czech hops and cool fermented with a Bavarian lager yeast, this beer will leave you happy to give up solid food for a while. No dessert necessary.

Pours deep dark brown with a big tan creamy head. Chocolate aroma and taste. Creamy mouthfeel from start to finish. Malty all around. Truly a classic.

one liter swing top bottle thanks to OldGrowth. ahhh...liquid bread! pours a reddish mahogany with a beautiful creamy, frothy tan head that takes awhile to settle to even more beautiful creamy lace. aroma is of dark, rich malt with a hint of sour hop bitterness. first sip seems like there is a bit of fizzy carbonation, but once this doppelbock warms slightly its just very smooth. this is about as full-bodied a doppel as I’ve had. very nice mouthfeel. flavor is of roasted malt, german chocolate with hints of caramel, toffee & dark fruit. upon the first taste there seemed to be some sour notes or bitterness, but after a couple of sips everything is in perfect balance. the alcohol is not even noticed until I’m on my second snifter full. thanks Tom, this is a good one and one I hope to try again & again & again.....

2005 1L bottle courtesy of Swededog! Poured a very deep ruby/brown with a thick initial layer of caramel head.... receded almost completely after a few minutes. Rich roasted malts provided the bulk of the aroma, with coffee, dark fruits (raisins and figs), baker’s chocolate, caramel, and some citrus Pac NW hoppage. Medium-full bodied on the palate, and creamy, yet there was a well-balanced bitter component from the hops. Just fantastic mouthfeel and flavor development. Flavors were of roasted bittersweet chocolate, raisins, fresh roasted coffee, caramel, light citrus, and some cherry tartness. Flavor was just awesomely deep and complex. Really couldn’t find any flaws in this one!

From a 1 liter swing top brown bottle, 2006 vintage, served at cellar temperature. Made a very good good appearance, poured a opaque red hued dark chocolate brown with a large fluffy, rocky, foamy tan head that slowly settled into a rocky, foamy, creamy lacing with a small amount of sticking, good carbonation. Had a big toasted dark malty nose with bare hints of charcoal, caramelized malts. A crisp, malt textured and creamy smooth medium bodied mouth feel, exceptional drinkability. Roasted and toasted malt taste, complex in it’s structure, caramelize malts and burnt chocolate, a great delicious crispiness from the malts, a herbal bite towards the end and a dry roasted and toasted malty finish. What more can be said, a great doppelbock, a must try.

Aged 1 year -> a step above fresh. Prune and pit fruit aromas and flavors prevail. Creamy with a lasting bitter milk dud finish. Delicious - best dopplebock I’ve tried. Fresh -> Pours deep mahogany into a shaker. Malted chocolate notes. Lasting micro head that leaves slight lacing. Smooth, creamy and soft. Toasted caramel. 8/8/8/4/17 = 4.1

Bottle. Opend with a loud pop(I like that!). Poured a dark brown body with nice size head. Great aroma. Malt, candied sugar, raisins, plums, tart cherries, caramel, chocolate. Flavor was all the above with a extremely well balanced, mildly carbonated dopplebock. This was just fantastic and reminded me that I need to drink more Dopplebock. Not to self: get more Thomas Hooker Liberator Doppelbock!

Merry Christmas to mee! Very dark brown, slight reddish hue. Nice foamy milk chocolaty brown head. Flavor of roasted malt and some light hops. Enough were used to create a perfect balance in this one! Very thick textured. Very special beer. I love it. I was to keep this one on hand all the time!

The 2006 hinged bottle poured a jet black into a Thomas Hooker glass. The wonderful off white head lasts a long time and thins out to a thick lace. Aromas of malts ,bread, molasses along with a nice flora hop note once it warms a bit . The palette on this is excellent thick and creamy not to much carbonation Flavors of toasted malts sweetness almost but just enough bitter to balance this perfectly. This is a great Doppelbock, one can only hope they don’t mess up this recipe. I will be going back for more
