Commercial Description:
Some breweries use honey in their wheat beer to allow them to use less malt and therefore create a much lighter beer. We think that’s a waste of good ingredients. We start with a standard American Style Wheat Beer (wheat malt flavor, low bitterness) and then add 1.2 gallons of honey per barrel to the kettle at the end of the boil. The result is a full malty flavor accompanied by cinnamon notes from the honey and the complex flavors that come from fermenting that much honey. This is far and away our best selling beer.

Sampled on tap. the bartender noted that this is one of their higher selling beers. The pour is a bright yellow with some cloudiness. Good carbonation with limited head and lace. The smell was citrus with some basic (pale) malt backing. The taste was pretty good for an American wheat beer. The honey is not really noticeable but a good hop aroma is present. More of a bittering hop flavor, it has a zingy and citrus taste to it. Kind of surprising but still pretty good. The malt was nothing fancy but did well to back up the hops.

On tap at the 2007 Nebraska Craft Brewer’s festival in Omaha. pours super pale gold in color with giant carbonation bubbles clinging to the glass. Has a thick creamy frothy white head. This beer has a huge honey flavor and seemingly a big alcohol palate. It is clearly differentiated from the Tiny Tim’s by the full and rich dominant honey that overpowers the flavor. Palate is slightly harsh due to the fizziness of the big carbonation. I’d like to try some of this aged for a while.
