Commercial Description:
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The production of Traquair House Ale consists of an infusion mash, after which the wort is drawn off and boiled with the hops. The wort is cooled and pitched with bottom fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

Traquair House Ale is a beer of huge complexity, interesting oak characters and roasted malt flavours, subtle nuances of PX and dry oloroso sherry, caramel, winey sometimes port like levels, chocolate and coffee and good hop bitterness. Carbonation is not too high, balance of sweetness and hops works wonderfully (some lovely caramelisation in the copper) and leads to a dry finish. Great with cheese, after dinner and although a great sipper, the mouthfeel can lend itself to being drunk awfully quickly. That’s (heaven forbid) not to say it’s easy drinking and not complex however - this is a beer of subtlety. It deserves a much higher rating in my opinion and another gem in the quest for skill and subtlety in brewing to be recognised alongside extreme, easy to pick out flavours.

DEEP brown brew with tastes of toffee sweet caramel and port wine in a chewy rasiny body. sweet and spicy from the hops it is not overdone. older bottle seems stronger in alcohol a bit of oak acrid smoked nuttiness at the end.

[1730-20080928] 11.2floz bottle. Spearminty green needles and dark malt alcohol aroma. Murky, dark brown body with a long-lasting creamy light tan head. Spearmint roasted malt flavour has noticeable alcohol as a toffee-like whiskey. Medium-full body. Fair, weird mint-whiskey characteristics; good candidate to re-rate. <br /><i>(w/ DuctTape, jerc)</i>

Bottle. Pours a slightly cloudy amber with a half finger tan head. Nose is brown sugar, caramel malt and dark fruits. Taste is earthy wood, dark fruits, toffee and malt. Medium mouth feel. Very complex brew and really good.

Flaske. Flot mørkebrun øl med en duft af frugt syltede i alkohol. Smagen er let sur med en del bitterhed og friskhed. Giver god mundfylde. Fin øl men ikke helt oppe at ringe.

Poured a dark copper color with a short off-white head that produced some lace. The aroma is dominated by slightly roasted malts, brown sugar and hints at tart apple. The flavor is malt, light spice, caramel and thin hops on the backside. Watery on the mouthfeel. Fairly boring. Was hoping for more at five dollars a bottle.
