Commercial Description:
Mainly available filtered in bottles, though part of the production goes unfiltered into cask.
The production of Traquair House Ale consists of an infusion mash, after which the wort is drawn off and boiled with the hops. The wort is cooled and pitched with bottom fermenting yeast under controlled temperature. It is then fermented in oak over a period of seven days. The beer is transferred into cold storage tanks or barrels and matured over a period of weeks. After maturation the beer is filtered prior to packing.

So, I opened this and poured it and then sat down and clicked on a few links here including the one for the brewery. I absent-mindedly took a sip and set it down. A few moments later I was overwhelmed and realized that I’d just tried it. Wow, we’re off to a great start here! Pours a dark brown color with not much head and no lacing. Eh. Aroma is of dark fruits and complex: light on the raisins, some cherries... Flavor grows on you. I mean, it starts out good, but then gets better. Serious cherry flavor, some oak (?), very peaty with a lot of very complex fruits floating around. I’m very impressed. Palate is a bit more thin than I would of liked, but you know, it just fits the beer. It leaves a nice presence on the tongue. Overall, if you haven’t had this yet, you really need to try it. Excellently done.

Bottle. Dark brown colour with a beige head. Aroma is sweet, malt. Flavour is sweet, malt, roasted, dried fruits. Quite nice beer.

Bottle, from Ryan’s restaurant beerfest. Too expensive at $8 a bottle. Ashamedly, I had this venerable brew at the end of a long night of drinking. But I tried very hard to hold concentration and develop an opinion on it! Aroma is heavy on the malt, but also has some sourness, wood, and a touch of smokiness. Flavor is quite full-bodied and complex. Overall, it produces a malty blend that is definitely a cousin of a brown ale. I tasted wood, malt, dark fruit, and a certain earthiness. It is heavy in your mouth, I can’t really explain it more. Kind of like a pretty, antique wood dresser that has been sitting unused in your living room. Not bad though, just weighty. Overall, I enjoyed this without maybe getting into it as much as I would have liked.

Cloudy and dark brown with minimal head. Very malty taste , maybe a little too sweet, but I like the smooth creamy texture. The finsih is not so sweet, very long and bitter. A good beer, but way too expensive for what you get.

Clear reddish brown of color with a beige head. A malty nose with notes of fruits, bread, nuts and syrup. A flavor with malt, toffee, syrup and dark fruits.

Reddish-brown, deep’n’dark coke-like color with creamy and lacy, beige head. Aroma is syrupy, roasty malty and fruity with mild hoppiness. Flavor is very smooth and sweet, also sugary, roasty malty and fruity with moderate hoppiness. Quite full-bodied and oily palate
